topsoil@indra.comBlazing Tomato Stir FryIngredients (use vegan versions): 2 teaspoon cooking oil
1 medium onion, chopped
2-3 cloves garlic, minced or mashed
Dried crushed chili peppers to taste (experiment with small amounts if you don't absolutely love the pain of spicy food ... you can always add more next time)
2 large spoonsful of plain (natural) peanut butter
8 or 15 oz. can of tomato sauce (eitherll work. I usually use the 15 oz. size)
4 cups misc. chopped vegetables (broccoli, green pepper, zucchini,
1/2 lb. cubed tofu or tempeh (optional)
Cooked brown rice to serve vegetables on.
Directions:1. Sautee onions and garlic in oil. When finished, add chili peppers, optional tofu/tempeh, and chopped vegetables, and half the tomato sauce. Simmer/stir until vegies are cooked but still crisp (not mushy).
2. Add remaining tomato sauce and peanut butter, stirring until the peanut butter has de-glob-ified and has combined with the tomato sauce to evenly coat the vegetables.
3. Serve over brown rice. Optionally, make tamari/shoyu and/or tobasco sauce available for individual tastes.
This recipe is very simple and quick to make, and is a good recipe for after-work cooking during midweek. It was also publishe'd in Lowfat American Favorites by Silverman and Williams, Nitty Gritty Cookbooks, 1990.
I made this recipe last night. It was FABULOUS!!! My fiance loved it, too. I did not have tomato sauce so I used a can of whole tomatoes that I smashed up and I used a fresh jalepeno pepper instead of the flakes. WOW!! Thanks,

i copied this recipe sometime last year and it is, by far, my favorite recipe to make. the peanut butter sounds weird, i know, but it is really delicious and easy!!

this dish was excellent and very easy to make. we used tempeh and a jalapeno based tomato sauce. my wife cannot stop talking about making it again!

I made this for a group of friends who are all carnivors and they loved it! They didn't even care that the dish was meat-free!
