Minestrone Soup

Ingredients (use vegan versions):

    saute one or two sliced onions in rich red wine,
    add several cloves garlic, minced
    pour in 28 ounce can of recipe cut or stewed tomatoes
    2 teaspoons dried basil or a bunch or fresh
    1 teaspoon each oregano and marjoram
    lots of freshly ground black pepper
    add 2 each zuchinni and carrots, chopped
    add a chopped potato
    if you like greens, add some chopped spinach or cabbage or....
    toss in a can of beans, any kind, or use home cooked if you have em
    a few sliced mushrooms can't hurt
    1 cup red wine (or broth)
    water as needed
    when it is nearly done, add a couple cups cooked pasta and some frozen peas and/or corn

Directions:

Serve with plenty of good vegan bread and the rest of the vegan wine.


This turned out great!  Howe'ver, it turned into more of a stew, but it was great!  We loved it!  I did not use vegan wine.  I added lots of vegetable broth.  Thank you for submiting such a great recipe!

So I tried this today and it was yummy!

I didn't add any beans as I don't like them in soup.  I used 1/2 c red wine and 1/2 c stock and still needed to add tons of water for the consistency I wanted.

An all round good comfort soup for a cold wintery day.

I made this in yesterday by putting everything except the cooked pasta in the crockpot  and when I got home the whole kitchen smelled of yummy, simmering tomatoes! It was a hit with my church friends at our social in the evening - very hearty, but also warm and cozy for a cold fall evening!

Alterations: didn't use potato, used broth instead of wine, my greens were cut green beans, my pasta was macaroni.
