Toms Spicy Lentil ThangIngredients (use vegan versions): 2 cups pre-soaked lentils (soak overnight)
1 potato
1 onion
oregano
basil, etc (generic italian seasoning works nicely here)
ketchup
Texas Petes Red Hot Sauce (or any other hot chili/ tabasco sauce)
Canola oil (or other light frying oil)
Directions:Chop up the onions and potatoes. Mix these in with the presoaked lentils. Heat up a frying pan on high heat, with about 1/4 inch of oil. When up to temperature, pour in the mixture. Allow to fry until thoroughly browned.
About a minute into the frying, add oregano (lots), italian seasoning (again lots), ketchup (1/8 to 1/4 cup) and hot sauce (a few good glugs- food, in order to be tasty, tends to require you not be afraid of your spices!).
This is really really good stuff. A small warning, howe'ver: if you anticipate being frustrated that evening don't make it; oregano is a serious aphrodisiac.

love the title tom! it was the only reason that i clicked on. i liked the tip about the oregano-thang too. i just wasn't aware of that.

This is really good - it reminded me of nothing so much as corned beef hash! Toms right about the spices, though - do NOT be stingy with the oregano or the hot sauce. The first time I made this, I was a little timid with the spices and it turned out kind of bland. One concern I have is with the fat content - could you use less oil? Maybe with a non-stick pan? I'll try it next time and report the results. Unfortunately,this recipe takes planning ahead of time (soaking lentils) and I'm usually not that organized! Anyway, GREAT, unique recipe!

I made this tonight and LOVED it! I made it in a wok, using less oil, using all the (tons of) seasoning in your recipe as well as some sweet chilli sauce. We served it with a bottle of tomato sauce which we kept adding on top. It was delicious, and completely stuffed two people. Thank you for sharing this!!

I forgot to say in my last comment--it reminded me of corned beef too, or Sloppy Joe mixture (especially with the added tomato sauce)-- I might try it on vegan bread next time.

My husband loves this stuff. You don't have to soak lentils. They cook like rice in about 45 minutes. If you have a pressure cooker, they're done in 15-20 min.
