Leek and Butter Bean Soup

Ingredients (use vegan versions):

    3 large leeks
    125g/5oz dried butter beans
    dash of white wine vinegar
    vegetable stock
    lemon juice
    fresh chopped parsley
    black pepper

Directions:

Soak beans in water overnight, boil until fairly tender (about 1.5 hours depending on age of beans). Cut leeks into slices and saute in a little water and vinegar.  Add beans, a mixture of bean water and vegetable stock about twice volume of solids, and simmer for about 30-40 minutes. Reserve a few beans and leek pieces for texture and puree the rest. Return pieces to soup and stir in seasonings to taste.


What are butter-beans?

I think butter beans are very close or the same as dutch beans which look like biege-browny-golden pinto beans. Pinto beans make an okay substitute.

Butter beans are like lima beans in taste and shape - they are just a different color.

The US probably knows butter beans as Lima Beans -the terms are interchangeable.  They are grown in the US in eg the middle Georgia area where you get the soil temperature of 65 deg required to germinate the seeds.

I've never seen butter beans dried, only canned.  My mom used to make them a lot when I was growing up.  I hadn't thought of them in years....now I've a big craving for them again....they're really good.

I used Lima beans and I thought this soup was really good. Of course, I added some onions, celery, carrots, an entire bulb of garlic, dried basil, and some dried thyme. I also did not puree anything but 1/2 of the Lima beans.
I will definitely be making this soup again  Thumbs Up
