Carrot Soup

Ingredients (use vegan versions):

    4 - 6 carrots (washed)
    piece of ginger (peeled) walnut size
    3 celery stalks
    1 large onion
    4 garlic cloves
    1/2 cup almond butter
    1/4 cup nutritional yeast
    1 teaspoon curry
    1/2 cup orange juice
    1 teaspoon sea salt

Directions:

Take first 5 ingredients, (carrots, ginger, celery, onion, garlic) chop coarsely and boil till tender with water to cover to top of veggies in pan.

Put into a processor or blender, with the water, don't drain.

Put back into pan and add remaining ingredients, and simmer till heated threw.  If too thick, add more orange juice to thin, but not too thin.

This is a meal in itself.  This is one of my own recipes, and is loved by all Smiley

if this is made correctly, it is truly one of the best soup experiences.  i absolutely love carrot soup that is cooked slowly by someone who really cares about making a wonderful soup.  highly recommend the experience to anyone who isn't afraid of a little carrots.

Just made this soup tonight, subbing tahini for the almond butter. It was wonderful. All the different flavors mix together very subtly. I will definitely make it again... and it was so easy and quick. Thanks for the recipe!

i made a half recipe but kept the ginger and curry the same and used tahini instead of almond butter like the previous poster.. i also added:

1 small potato
a couple shakes of cinnamon and nutmeg
1/4 teaspoon tumeric
1/4 teaspoon white pepper

and i topped it with sliced green onion  Thumbs Up

it is super delicious ginger-y spiced carrot soup Cheesy thanks!

I made this soup last night. My boyfriend was sick and I wanted to make something healthy and hearty. It really did the trick. I didn't have orange juice or ginger, and the flavor was really subtle. The tahini gives it a really interesting taste. I loved it, and will likely be making it again this time with the two missing ingredients. Thanks so much for posting this! So simple and so good!
