Carrot SoupIngredients (use vegan versions): 4 - 6 carrots (washed)
piece of ginger (peeled) walnut size
3 celery stalks
1 large onion
4 garlic cloves
1/2 cup almond butter
1/4 cup nutritional yeast
1 teaspoon curry
1/2 cup orange juice
1 teaspoon sea salt
Directions:Take first 5 ingredients, (carrots, ginger, celery, onion, garlic) chop coarsely and boil till tender with water to cover to top of veggies in pan.
Put into a processor or blender, with the water, don't drain.
Put back into pan and add remaining ingredients, and simmer till heated threw. If too thick, add more orange juice to thin, but not too thin.
This is a meal in itself. This is one of my own recipes, and is loved by all

if this is made correctly, it is truly one of the best soup experiences. i absolutely love carrot soup that is cooked slowly by someone who really cares about making a wonderful soup. highly recommend the experience to anyone who isn't afraid of a little carrots.
