Really Good Vegan Chili

Ingredients (use vegan versions):

    4 veggie burgers / your favorite brand is fine
    1 can red kidney beans
    1 can pinto beans
    1 can black beans
    1 can pink beans
    1 can black eyed-peas
    1 small can tomato paste
    1 large canned tomatoes with puree
    1/2 head of fresh broccoli- just the top chopped chunky
    1 lb white mushrooms quartered - more if you like
    1/4 cup sunflower seeds- unsalted
    1 tblsp organic molasses
    1 medium yellow onion cut up in chunks

Directions:

In a large pot, heat up some olive oil and start with putting in the veggie burgers in bottom to brown on both sides.  Then break them up with a large spoon or spatula and add the onions.  When the onions are soft and clear looking put in the mushrooms and the broccoli. As the mushrooms get a little bit dark and broccoli gets more cooked and just soft put in the canned tomatoes. Stir really well and break up the tomatoes as you stir. When it bubbles a bit add all the cans of beans. Stir well.  Add the sunflower seeds and add the molasses. Keep stirring. Add whatever seasoning appeals like pepper, salt, crushed red chili peppers, dulse sea weed, lots of garlic powder is always good Smiley

At this point the chili is to the personal taste of the people eating it.

Spoon into bowls and serve with whatever topping you prefer.  I like to use Hemp Cheese as the nutty flavor offsets the chili Smiley

My meat eating family really asks for this dish repeatedly and will even help me put it together!!  Anything goes to taste!!  In my family the more spice and garlic the better.

It is very filling and full of all those good things that are good for you.

Serves: 4-6 depending on appetite

Preparation time: approx. 1 hour

Delicious!  I subbed shitake for white mushrooms, and navy beans for pink.  Seasoned with cayenne, chili, nutmeg, cumin, garlic and onion powder, salt and pepper.  It made a huge serving!! love when I can stretch my dollar.  We'll be eating this for days.  Evil  Thumbs Up
