Awesome Spicy Black Bean Chili

Ingredients (use vegan versions):

    2 teaspoon olive or vegetable oil
    1 large onion, chopped
    1 large green bell pepper, chopped
    1-2 jalapeno peppers, seeded and chopped
    1 Tablespoon chili powder
    1 teaspoon cumin
    1 teaspoon oregano
    1/8 teaspoon cayenne pepper (optional)
    (1) 14 oz. can diced tomatoes
    (2) 16 oz. cans black beans, rinsed and drained (OR 1 can black beans & one can kidney beans)
    1 cup corn
    1/3 cup fresh cilantro, chopped (optional)

Directions:

Add chopped onion, bell pepper, jalapeno, garlic and oil to large skillet.  Cook over medium heat until vegies are soft (about 5 mins).  Add spices, tomatoes (undrained)and beans and simmer for 15 mins.  Stir in corn, cook 2 mins.  Add cilantro and serve.

-You can add water for a soupier consistency.

-Use only one jalapeno and omit the cayenne if you don't like spicy.

-This recipe is great for big groups, and the recipe can be stretched by serving the chili over elbow macaroni.  Enjoy!

Serves: 5-6

i have to say...YUM!!!!!  i am only just coming over to the vegetarian side of the world (hey i am a farmers daughter...i was raised on beef...blech...lol)  and i have been having a hard time finding veggie food that is full of flavor!  THIS ONE WAS WONDERFUL!!!!  i could probably use a little more kick to mine but i LOVED this.  I served mine over rice and was happy for days!  Thank you SOOOOO much!

This is an excellent chili recipe!  I also added 1 small can of tomato sauce and 1/2 pkg. veggie ground round to give the chili more of a meaty consistency.

Mmmm.  I made this in my cast iron skillet last night for dinner.  (EXTRA iron! WooHoo)  I used 3 cans of beans and probably a bit more cilantro--cause we love the stuff.  It was SO good.  We ate the rest kinda like a dip with corn chips for lunch today.  Very good!!

Dang, and here I thought I was the Queen oBeans. . . this is easy the best chili recipe I've ever cooked, different & delicious.  (Although I heartily disagree with the idea that the cilantro could be optional -- its a firm requirement, IMHO.) One suggestion, to add a touch of the exotic:  in Brazil, where black beans are the national dish, you garnish your black bean soup with thinly shaved orange rinds.  It adds a delicious citrusy touch to this chili, and its pretty, too.

This chili is amazing.  The cilantro added a unique touch to a delicious vegetarian staple.  My family (two vegetarians, one kosher, and one omnivore) all loved it, and it tasted fabulous when re-heated for up to a week.  I recommend adding jalepenos, some fake ground beef, and an extra can of beans to make it more of a stew.

I was leary when I first saw this recipe- but when I read all the positive comments, I decided it was worth a try. I just got finishe'd making it....BOY IS IT GREAT! This recipe will be going into the favorite category! I did increase the spicy ingredients by 50% -but otherwise, followed the recipe exactly, and it is delicious! I just made this chili tonight and it was great! I did make a few adjustments, adding some more chili powder, salt, pepper, a can of water, a few pinches of brown sugar, and it all tied together very nicely! Definately try this recipe.

WOW!  Really good!  Didnt have some of the ingredients (onion, green pepper, jalapenos) and came out fine without them.  Added zucchini and tasted GREAT!  Definately make this one!

Wow. This was really good. I'm slowly becoming a vegetarian, and this recipe will definetly help with that. I added more cayenne, and tried the brown sugar. I also substituted an orange pepper for the green to make it a little sweeter. Awesome.

Quick, tasty and filling.  I added a clove of minced garlic, 3 ounces of tomato paste, one half cup of water and a handful of diced mushrooms that were looking a bit pitiful.  Omni-spouse enjoyed scooping this up with blue corn tortilla chips.

This was really good and SOOO easy to make.  I left out the bell pepper, upped the cayenne slightly, and added have a roll of veggie meat (I cooked it first on the side, then added it in toward the end).  I served it with some freshly baked beer bread and it was fantastic!  Very filling!

YUM! I made just a few changes to mine: I added 2 cups of vegetable broth, an extra can of beans (I chose kidney for the third), more of each spice (especially the cayenne), 4 cloves of garlic, half a package of veggie sausage (cooked and crumbled), and a can of diced green chiles because I didn't have any jalapenos. I served it with homemade bread (Outrageously Easy Big Vegan Bread on this site), and it was quite delicious and VERY filling! Thanks!

Oh, and I served it topped with a dollop of vegan sour cream (we like Tofutti brand). That really made the chili fantastic -- the coolness of the sour cream complemented the heat of the chili perfectly. I can't wait for the leftovers! :-)

A beautifulyl flexible chili!

I had it for the first time on Christmas 2005. I love it because it carries a great taste and special memories for me!!

Highly recommended for those looking for a quick and easy dish that can last for days!

Quick, easy & tasty.  It was a little too thick for me so next time I'll add some tomato sauce.  I also like my chili with more heat so I'll add more spices or another jalepeno.  Overall it was really good especially with a dolop of Tofutti sour cream on top.

Last night, it took forever to get home courtesy of the weather. I was so happy to find that this recipe came together so quickly and tastily! It was just a touch too spicy for my daughter (she could roll with the beans, though. Not bad for a one year old), but other than that - awesome!

Wow, this was really really great. I didnt put the jalepenos or the cayenne, and it was still spicy, and delicious. I realized, though, in the process of making it, that I didnt have 2 cans of black beans, or kidney beans, so i just substituted northwestern white beans, or something like that, and it still exceeded my expectations. MMMMMMmmmm tasty!

I have some chipotles in adobo chilling out in the freezer - do we think this would be a good replacement for the jalapenos, 1 for 1? I'm thinking YES (love the smokiness) Smiley but was wondering if anybody else has tried this sub or thinks it would be yummy, too.

I loved this. I used a can of fire roasted tomatoes and two chipotle peppers in adobo. It was a great way to get in my beans, because normally I don't care for them very much. The boyfriend enjoyed it as well, but I think to him, nothing could stand up to his grandmother's chili (it's the story of my cooking life)! I, however, love a hearty bowl of chili without the gross meat! And there's some left over for about two more meals - hooray!

I recently remade this recipe for my family as part of World Vegan Day.

I recommend including two sweet potatoes (chopped), an extra can of tomatoes and some vegan mince. Very tasty results.

One of my favourite chili recipes!

yumm my favorite chili now!   I saw hominy was near the beans at my store, so instead of corn i put some white hominy in it and it was verrrrrrrrry  good!

I LOVED this chili. I actually made it a few months ago, had some leftover and popped it in the freezer.

I pulled it out the other week thinking it was spaghetti sauce but to my surprise it was this wonderful chili.

I just wanted to add that not only is it delicious but it freezes well--- it was perfect for a chilly (pun! haha) fall evening when I needed a quick dinner.

Everyone who likes spicey stuff should try making this- it's also a good starting point to go in your own direction. I don't think I had all the same ingredients but I made it work with random beans and veggies.

So delicious.
