Cauliflower  Soup

Ingredients (use vegan versions):

    1 head cauliflower
    1 onion
    2 carrots
    2 leaves spinach
    water
    salt and pepper to taste

Directions:

Cut cauliflower into flowerets.  Add cauliflower and remaining vegetables to pot.  Add enough water to only cover vegetables in pot.  Bring to boil and continue boiling until all are very tender, usually about 15 minutes.  Drain, reserving cooking water.  Put vegetables in blender and blend until smooth adding more cooking water as needed for desired consistency.  Add salt and pepper to taste.

Soup has milky consistancy without the milk!

Where in the world do I find TWO spinich leaves?  Recipe sounds great.  I am an 84 year old widower and feeding myself is not easy.  I need all the help I can get.  Want to try recipe, so please tell me how to buy a small quantity of spinach.  Thanks!

George - to get just two leaves you'd have to grow the spinach yourself or raid someones garden / grocery store. Smiley But I can't advocate theft publicly so why not just buy it in the normal quantity and freeze the rest or use the rest for the next days meal? Spinach salad, pasta with spinach and your favorite sauce, steamed spinach....., spinach and vegan cream cheese rolls.... can you tell I like spinach?

Simple, tasty, & healthy - just what I needed!  I am struggling with TMJ, trying to find good ways to eat veggies since I can't eat salads or even chew many cooked vegetables right now, so this was perfect.  I added a little curry powder to  my second bowl, & it worked well.  Thanks!

Impressive soup!  I'm always skeptical of recipes bcuz 80% of the time I'm disappointed but I love this one!  Its cheap, easy and very tasty!

Great soup!!!  I changed the recipe a little to suit my needs. I added 1 clove of garlic and one medium potato (mashed) to the soup. I also skipped the spinach. The soup tastes great and takes less than 20 minutes to prepare.

excellent soup!  Instead of the 2 spinach leaves I used the cauliflower leaves instead, and it gave it a wonderful favor!!!!!

Its a keeper.  But I had lovely baby spinach and couldnt resist using a generous handful.  2 leaves? Ha!  Next time I'll add a couple of garlic cloves too.  Easy enough to cook while you're deciding what else to make for dinner!

it's very different not like anything I've had before but its great! A nice soup ready in 20ish min for me. But only 5 min prep. So simple and a great flavor. I will be making this again! oh and I opted to nix the spinach but just because I was to lazy to buy some.

oh also I would make sure your cauliflower/carrot ratio is good. I had a smaller cauliflower and 2 HUGE carrots and I think next time I will do a bigger flower with maybe 1 1/2 carrots. Still good just tastes more of carrots

So, I don't (and may not) have a picture of this b/c my camera is charging.....but it was really great! I was quite surprised. I sauteed the onion
first, then added the cauliflower and some garlic, then the carrots and water, and seasoned with lots of s and p. I pureed some of it, then added some leftover steamed kale, and pureed all of it. I ended up adding more s and p b/c the carrots made the soup sweet! I warmed it w/ a bit more water.  Thumbs Up

I had a massive cauliflower head from my garden that need to be used.  This recipe was a great base to play with.   I added gram marsala powder, curry, cilantro, a couple garlic cloves and some peas to add some color.  I pureed most of it, but left some chunks of carrot and cauliflower.  Warming and really filling.

I'm sorry, but I didn't like it at all. It had very strange smell and taste :-( I didn't even have desire to eat it :-(

While the soup looks like the picture, it is lacking in flavor. It would have been great with some kind of herb combo to go in at some point. I added an entire extra onion and a few cloves of garlic, then some vegan chicken broth base, salt, and pepper, and I still don't like it... :/
