Avocado Soup

Ingredients (use vegan versions):

    1 small onion, finely chopped
    Olive oil for saute
    1 med. avocado
    2 teaspoons soy sauce
    2 1/2 cup of water
    sea salt

Directions:

Saute the onion until its transparent. Peel avocado and remove the pit.  Combine the onion, avocado, soy sauce and water in a food processor or blender and beat well.  When the mixture is smooth put into a saucepan and let it come to a boil.  Simmer for 2 or 3 minutes.  Serve right away or it will discolor.  This is a very creamy unusual soup.

Serves: 3-4

Preparation time: 20 min


I have never tried this soup but I know Denise and she makes good soup. So eat it.

to prevent disclooration, try adding a little lemon or lime juice.  Add a LITTLE cilantro for an interesting southwest flavor.

GORGEOUS soup! If you love avocado, you will love this. Simple to make and absolutely delicious! I added a drop of lime to prevent discolouring - next time I'll add a dash of cilantro. Also, these measurements just served two people, but wasn't really hearty, so next time I'll probably double the ingredients for more! (I find soup doesn't really fill me up) But it was beautiful just as it was, creamy, delicious and unique. Try it!

I made the soup with frozen avacados from Trader Joes, which are great, if you can get them, because you always have fresh avacados on hand.  The soup was great.  I used one cup of veggie stock + 1.5 cups water rather than all water.  It was great!

i was truly amazed at how good this simple soup tasted. I added a little salt and pepper just to bring out a little more flavor and wow, it is really good!

I made the soup with shallots instead of onions, and used 1 cups of water and 1 cup of vegetable broth. I also used the juice of one small lemon to keep the avocado green. The soup was very flavorful and tasted a bit strong from the lemon juice, but I liked it that way. My non vegan husband ended up taking it away from me. : )
