The Un-Meat Loaf

Ingredients (use vegan versions):

    1 cup cooked brown rice
    1 cup wheat germ
    1 cup instant oats or oat bran (uncooked)
    1/2 cup walnuts, chopped fine
    1 cup mushrooms, chopped fine
    1 medium onion, chopped fine
    1/2 bell pepper, chopped fine
    1 medium carrot, shredded fine
    1 teaspoon dried thyme, marjoram or sage
    2 tablespoons fresh parsley finely minced
    2 tablespoons soy sauce
    2 tablespoons prepared mustard
    ketchup

Directions:

Combine all ingredients and mix for 2 minutes with a wooden spoon.  Pack in to a 4 x 8 loaf pan sprayed with Pam and bake at 350 degrees for 1 hour or until lightly browned.  You may wish to top the loaf with ketchup after about 40 minutes, then continue baking the final 20 minutes.  Let stand 10 minutes before slicing.

NOTE:  The vegetables should be chopped as finely as possible.  If you have a food processor this would be a great time to use it.  Put each vegetable and the nuts in one at a time, pulse until finely ground. Then dump in to a big bowl with all other ingredients for final mixing.

This recipe freezes well too!  Just wrap in foil and then in a freezer bag.  To reheat either slice and warm in the microwave or reheat covered in a 350 oven for 20-30 minutes.

I am very anxious to try out this recipe, but my daughter is allergic to wheat. Is there anything I could use in place of the wheat germ?

Excellent texture and flavour.  The only modification I made to this recipe was to use a jazzed up tomato sauce concoction as a replacement for the ketchup.  Other than that, this recipe is a winner.

To Jenk I haven't tried the recipe yet but i thought you could try ground flax seeds. You can grind yourself or health food stores usually have it already groun,if your daughter can eat flax it might be an alternative.

For Jenk: I would suggest you try to locate oat germ, or try oat flour.  Ground flax seeds can be too much fiber and cause diarrhea for some people, especially if you daughter is a young child.  MJP

I hated it.  Sorry but maybe it would be better with a spiced tomato sauce cooked in.  Still, the texture was so yucky.  I'll try slicing and frying the rest,

I made this for dinner last night and it was wonderful!  I mixed in a little garlic powder and 1/2 a packet of meatloaf seasoning.  It was even better today as leftovers for lunch.  Very yummy and will become a staple for me I'm sure!

Been a vegetarian for about a month now and want to cook some good vegetarian foods for my family.  Maybe its because it was so different for us, but no one liked it (husband and 2 kids, ages 14 and 17).  Even I thought it was only mediocre, but I ate the leftovers.

I ran it through nutritiondata.com, and here's a brief workup (per 1/8 loaf):  187 calories 7 g fat (1 sat) 0 mg chol 304 mg sodium (13% DV) 25 g carb 5 g fiber 8 g protien (11% DV Iron!)

I made this for thanksgiving last year.  My non vegan family loved it!  My meat eating Aunt said she's been waiting all year to have it again.  She said she may even become a vegan!

Very good.  A little bit dry.  We might try adding some molasses next time.  I was surprised by how closely the taste resembles actual meatloaf.  Or at least my memory of it.

We have made this recipe multiple times now.  My omni husband loves it and keeps requesting it.  We've changed it up each time, and every time it's come out delicious.

I have to admit, when I began removing animal products from my diet I became very concerned with eating whole, unrefined foods.. and so I started out not eating meat substitutes, believing they were silly and rich in additives and preservatives.  Lately however I've been embracing them, and this was my first "un-meat loaf!" As a friend once remarked, they're an excellent way to encourage others to adopt plant-based diets.. and after trying out this recipe I will certainly be serving it to my omnivorous friends and family.  I think my KFC-loving boyfriend will love it too. (:

As for some of my modifications.. I added about 1/4 cup of ground flaxseed and 1/2 tsp. sage plus 1/2 tsp. thyme to the loaf and substituted pecans for walnuts (I didn't process these but rather left them in pieces).  For the sauce I mixed some Campbell's Tomato Soup (contains fruit sugar as a sweetner.. so it's vegan!) with paprika, chili powder and cayenne pepper.  Lovely served with some fresh salad greens and spinach!

For reasons I don't remember, I made this and froze it without eating any a really, really long time ago (think months). This week I finally defrosted it in the microwave, and it was amazing. I wish I had eaten it sooner. It was really good with leftover Christmas mashed taters and gravy. Yum!

pretty good. i baked it in a 8x8 pan because my bread pan was missing. it was pretty good, but i don't know if i would make it again. i served it with potato-squash mash and gravy. it was a good meal

I made this last night for a group of my friends and even the non-vegan ones loved it! I didn't put mushrooms or bell peppers because of a couple of my friends food dislikes. I added a half a can of black beans and 2 TBSP of olive oil since someone mentioned it being a little dry. It was amazing!!!

This recipe has potential, but I think I will try a few changes next time.  I agree that it came out dry... some of the rice even got hard on the top.  Overall, it had a nice flavor.  My daughter thought it was bitter but I did not taste any bitterness.  My husband liked it a lot.  I skipped the ketchup because I served it with gravy, which helped.  I think next time I will try adding some broth and keep the lid on throughout the cooking.  It is also possible that my veggies were not chopped fine enough.  Will def use the food processor next time.  Oh, and I subbed salt for soy sauce since I can't have soy. Still, a comforting dinner, good w/ mashed potatoes!

About how much ketchup/tomato sauce should be used?  This looks pretty good and I want to try it when I get back to the states.

just cover the top of the loaf with the ketchup, smooth it out evenly with a spoon, it's really up to your tastes buds how much ketchup you want to smother on it... i like a lot!
