Dont-Look-Any-Further Banana Bread

Ingredients (use vegan versions):

    1 tablespoon vinegar
    soy milk
    2 cups all purpose flour
    1 cup sugar
    2 tablespoons baking powder
    1/4 tablespoon baking soda
    1/2 cup vegetable oil
    1 tablespoon vanilla extract
    2 medium bananas, mashed

Directions:

Preheat oven to 350 degrees F.  Grease/spray a 9 inch square baking pan; set aside.

Put one teaspoon vinegar in a liquid measuring cup and add enough soy milk to equal 1/4 cup; mix together and set aside.

Meanwhile, in a separate bowl, mix dry ingredients together; set aside.  In another bowl, beat oil, vanilla, and bananas.  Gradually add in dry ingredients as well as the soy milk mixture.  Beat until smooth.

Pour batter into pan.  Bake for 25-30 minutes until brown on top and toothpick inserted near center comes out clean.  Serve warm, if desired.

*Notes: You can add nuts or desired spices (like cinnamon).  This can also be made in a standard size loaf pan (adjust cooking time accordingly).

Serves: 10

Preparation time: 10 min.

This is an awesome recipe and super easy to make. Delicious! I did not use baking soda because I didn't have any.  I added cinnamon and walnuts.  It could maybe even use another 1/2 banana, but the 2 work just fine.  Great recipe to have on hand when you have some bananas going bad that you don't want to waste, especially since most kitchens usually have all the ingredients.  Thank you!

is it a teaspoon of vinegar, or a tablespoon? the list of ingredients and the written instructions contradict eachother. thanks!

This recipe was so simple and delicious! I was confused about the vinegar part too but it worked out fine. Thanks!! I don't remember the last time I had banana bread. Its so good!!

Yum! however i had to bake it for like 50 min. I think because i used a sorta deep dish for it. But everyone loved it!

Sorry about that!!  It should be 1 teaspoon, NOT tablespoon.  I'm not sure how it got mixed up . . .   Smiley

Obviously I am alone on this, but I really did not like this recipe at all.
I found it way to bitter and the consistancy just wasn't right. I think it needs alot of tweaking (at least for me anyway).

Could your leavening agents be passed their prime? If so that might explain the taste and texture issues. Personally I love this banana bread recipe http://vegweb.com/index.php?topic=5715.0 and the only chages I make are: I added a 1t. vanilla and 2t. cinnamon like someone else suggested and sprinkled a little sugar on top for an extra crunch and I do half brown half white sugar and I add an extra 1/4 cup of flour.

I used 3 bananas instead of 2, used whole wheat flour and reduced the sugar amount to 3/4 cup. I also baked it in a loaf pan for 50 minutes. It's a hit in our household!

I created a profile just to review this recipe! It's amazing how simple and tasty it is! I was surprised by how well it stayed together, I recommend it to anyone!

The only thing I changed was a reduction in sugar and rice milk instead of soya.

 made this last night and did not have any vanilla, so I tried it with about  1 tsp of almond extract instead...DELICIOUS!!  And very easy!

This was so yummy!!! I followed the recipe exactly except that when I sprayed the pan I coated with cinnamon and sugar. It made the outside of the bread crunchy with a sweet taste. YUMMY! Going to make this again.

Much too sweet for me so I'd definitely cut back on the sugar next time, but otherwise very good basic recipe to add to or leave as is.
