Strawberry Rhubarb Leather

Ingredients (use vegan versions):

    1 cup rhubarb
    1/4 cup water
    2 cups strawberries sliced
    1/2 cup sugar

Directions:

Combine finely chopped rhubarb and water. Simmer over medium heat for about 5 minutes. Add strawberries and vegan sugar. Simmer another 5 minutes.  Puree mixture until smooth in a blender or food processor.  Dehydrate in a dehydrator or in oven.*

To dry in an oven just set temp at lowest possible setting --about 140 degress would be good.  Dry until fruit feels leather like ;yet pliable.  This would probably best be done on parchment paper,  Remove the leather while it is still warm and roll it up.


Sounds good, but if done in oven: I used brown freezer paper and the leather stuck to the paper. Is there any way to use brown paper without this happening?

If you decrease the sugar to 6 teblespoons, and don't dehydrate, you have a wonderful sauce or dip!

I made a strawberry rhubarb concoction yesterday and forgot about it, so it ended up more as a syrup than what I was hoping it to be... However, I'm going to blend and dehydrate it to fruit leathery goodness. Thanks for the inspiration!

OMG, these are awesome!!!!!  My lovely mother-in-law got my toddler hooked on fruit snacks (ie- gusher, fruit by the foot, fruit roll ups) which I was NOT happy about.  When I tried this recipe, I had no idea how successful it would be...  Well, let me just say that I have now made these five times, doubling the recipe and using different fruit combinations.  I even gave this recipe to a girl at work!   Thanx a bunch!!!

Before there was wax paper ... we'd rub shortening onto the brown paper, just as if you were greasing a cake pan. This should prevent sticking.

Thank you for the recipe, I'm having fun making different fruit combinations, so simple and such a treat for the kids, big or small.
