Ingredients (use vegan versions): 2-3 green chiles (jalapenos preferrably)
1 bunch cilantro
10-15 peanuts
2-3 cloves garlic
1 teaspoon oil
lemon juice (to taste)
salt (to taste)
Directions:Sandwich:
Ingredients (use vegan versions): 1 baked potato (either boiled or baked in an oven)
1 beet (boiled)
1 cucumber
1 tomato
bread
jaljeera (found in Indian grocery stores) or ground cumin
Directions:Serves 3-4.
Cut up the cilantro and put it in a blender along with the peanuts, chiles, garlic, and blend until you get a paste.
Put the mixture in a bowl, and add salt and lemon juice to taste.
Cut the cucumber, potato, and beet, and tomato in round circles.
Cut off the crusts of vegan bread slices (optional).
Spread on the paste to one slice of vegan bread, layer desired amounts of each vegetable, sprinkle jaljeera or ground cumin, top with another slice of vegan bread, and eat.
