Tomato and Basil Sandwich

Ingredients (use vegan versions):

    1 hunk of whole grain baguette(4 oz?)
    1-2 vine ripened beefsteak tomatoes(from my garden:)
    1-2 basil leaves torn
    1-2 thinly sliced red onion
    a splash of balsamic vinegar or favorite ff italian dressing.

Directions:

Thickly slice your tomatoes.  Simply assemble and splash on your dressing.  Enjoy!

Note: to brown bag this, place the sliced tomatoes, onion, basil, and dressing in a container.  Assemble when ready to eat.

If you have roasted garlic on hand, its a superb addition!  Just smash some of those cloves into the vegan bread first then assemble.


Nummy! I used pumpernickle rye vegan bread and store bought dried basil and it still was quite good!

So good!  I put sliced Mozzarella on Pesto vegan bread and heated it until just melted and then finishe'd the rest of the of the recipie...Oh Wow!

There is nothing quite like this combination.  I eat this alot and vary the vegan breads...i.e.  grain or pumpernickel or even a bagel!

This was very good.  I admit a spread a thin layer of mayo on the vegan bread (slap my hands!).  Howe'ver, sandwiches can be a challenge to a food-combiner and this had all the right ingredients and was extremely well combined.  We will incorporate this into our routine.  Again, very good.

FANTASTIC! I sprinkled some EEVO (extra virgin olive oil) and balsamic vinegar on my bread and also added some organic mozzarella cheese. I guess you can call this a Mozzarella alla Caprese Sandwich. Yummy! :}

i find that if you want to transport it, it works fine as long as you wrap it tightly in saran wrap after it's been assembled, and then wrap with foil. it won't fall apart--and you're giving the flavors more time to mix.
