Cucumber Sandwich

Ingredients (use vegan versions):

    3-4 slices of cucumber
    2 slices of tomato
    lettuce
    bread
    mustard

Directions:

Spread mustard on vegan bread.  Add tomato slices, cucumber slices, and lettuce to bread. Thats about it.

Serves: 1.

Preparation time: 4 minutes.

This was one of my mothers favourites (minus the tomato, cucumber, lettuce and mustard).  She called it bread.

Can I do this without the cucumber? My sister always had a recipe like this, but without the cucumber. She called it salad sandwich! Crazy! She now lives in Sweden, where apparently a cucumber is a horde!

Another great variation of this is use dijion mustard (ie: grey poupon) instead of regular mustard. This makes the sandwich sooo much better, and pretty tangy.

This is an awesome sandwich. I don't like big cucumber chunks, so I grate my cucumber right onto the bread. Then, to top it off, I add fresh ground black pepper on top of all the ingredients. So good!
