Dads Favorite Carrot Salad

Ingredients (use vegan versions):

    6 medium carrots peeled and grated
    1 handful of raisins
    1 handful of sunflower seeds
    1 handful of sesame seeds
    1-2 cloves of garlic depending on your love of garlic! (optional)
    1-2 tablespoons of lemon juice

Directions:

Mix together, give it atleast 1 hour for the flavors to mix.  Nutritious easy and delicious.  My five year old asks for it!!!

Depending how much you want to make, this recipe is easily adjustible.  Serves: 6

Preparation time: 15 mins

Nutrition Information: I'm not a specialist but off the top of my head: carrots= vit. A raisins are high in iron.  Seeds have mineral, protein and calcium.  Lemon has vit. C and garlic among other things keep parasites and people you don't like away!


Used this recipe for a picnic with my dad on Fathers Day.  Everyone loved it!

The idea of adding nuts to the salad is great, but we found the salad too dry.  It could be a function of the fact our carrots were pretty old.  Howe'ver, next time well add more liquid to it somehow.

I liked this; my friend who isn't big on carrots called it too carrot-y and my friend who likes them liked that it was really carrot-y.  it takes forever to grate carrots, by the way-- it took me about 30 minutes.  I left out the garlic and made a sauce of lemon juice, maple syrup, and water so that it wouldn't be dry, and it was nice and moist, and sweet and sour.  (I just mixed the juice of 1 lemon and a couple of tablespoons of maple syrup with a little water over the stove.)

i really like this recipe!!! i just use the carrots, sunflower seeds and raisins.  then i toss them in a little lemon juice, balsalmic vinegar (cause i love the stuff) and olive oil to give it moisture and flavor.  o ya i also throw in a little salt and pepper for spice.  awesome use up of leftover carrots!
one more thing... to the person who said it takes forever to grate the carrots, i know what you mean, im always impaitent and grate my knuckles!!! but its handy if once the carrot starts getting small stab it on a fork or something of that nature and you can grate much faster without worrying about getting your knuckles!

To the person who said this salad was too dry: I have made a similar version of this, using orange juice in addition to the listed ingredients.  The sweetness of the OJ contrasts wonderfully with the garlic (although it sounds strange).  Try it!

Excellent salad. But I didn't have raisins or sunflower seeds, so I minced onions and cut some broccoli up real tiny. Still yummy.
