Tomato and Cheese SandwichIngredients (use vegan versions): 4 slices of cheese (soy cheese)
2 slices of vegan bread
2 slices of tomato...(add more if you like)
tsp. garlic powder or salt...(your preference)
Directions:Place vegan bread in toaster oven and toast till top is lightly brown. Place the cheese even on both pieces of vegan bread and bake at 425 F. till cheese begins to melt. Then add the tomato and garlicto both pieces of vegan bread and put them together and let bake for 2-4 minutes. (select your liking)
AND ENJOY!!!!!!!

I grew up on this little gem! This is especially grand when placed on sourdough english muffins. Serve with sludgy coffee and you have the ultimate in comfort food. mmmm....

This is also great with havarti cheese....perfect combination of flavor with the tomato. Also, this can be grilled if you're in a hurry.

Yummy! This is the first recipe I have made from this site. I replaced the tomato with tomato sauce and used multi-grain vegan bread and it tasted great! Just like a quick and easy pizza!

I love this recipe! I eat it at least twice a week. Melissa - if you use real cheese then it would not be vegan.
