Easy Low-Fat Almost Pesto Pasta

Ingredients (use vegan versions):

    pasta of choice (I use multi-grain spaghetti)
    2 handfuls of fresh basil leaves
    3-4 cloves of garlic (I sometimes use more)
    1 teaspoon olive oil
    3-4 tablespoon vegan parmesan
    1 tablespoon pine nuts (optional)
    sea salt to taste

Directions:

Start cooking your pasta as the package says. In a blender or food processor, chop up the basil and garlic finely. When the pasta is done, transfer it to a big bowl, and dump in the chopped up basil and garlic. Add your olive oil & salt and toss.  Sprinkle the parmesan on top, and pine nuts if you want, and that’s it.  This is super easy and really good...and gives you that pesto taste without all the oil. Its also great cold the next day.

Serves: 2

Preparation time: 15 minutes

I really don't like the taste of uncooked garlic (I find it too strong), so I would recommend pan toasting the garlic and pine nuts together for a few minutes before blending them. Otherwise, this is great.
