Gardeners Favorite Squash Casserole

Ingredients (use vegan versions):

    10 medium zucchini and/or yellow crookneck squash-each about 6-8 inches long
    2 large onions, quartered and sliced
    1 cup cold soy or nut milk
    2 tablespoon Wondra flour
    2 tablespoon margarine
    1 teaspoon sweet basil
    1-1/4 teaspoon salt
    2 sleeves Ritz type crackers, crushed
    10 Ritz type crackers, crushed for topping

Directions:

Wash and dice or slice squash and onion, steam lightly.  Let cool.  Make white sauce of the milk, flour, margarine, sweet basil and salt.  Cook until very thick.  Crush vegan crackers, sprinkle over sauteed squash and onions, pour white sauce over top and mix well.  Pour into PAM sprayed 9x13 casserole dish.  Crush remaining vegan crackers and sprinkle over top.  Bake at 350 degrees for 1 hour or until top is golden.

This is a gardeners favorite casserole because it uses up a lot of the yellow and green stuff and disappears almost magically.  Enjoy!

This recipe sounds wonderful...only one question...What do you mean by sleeve of vegan crackers.  Recipe calls for 2 sleeves...to me that means 2 long pkgs. but it sounds like an awful lot of crackers...please respond, I really want to try this recipe..thanks!!

Savannah:  2 long packages is exactly right, there is a lot of juice in 10 squash, plus the white sauce, the vegan crackers absorb all that and make it just the right consistency!  This recipe does make a large casserole dish-not a 9x13, I use a large oval glass roaster pan, probably a 4 or 5 quart dish, and take it to pot-luck I haven't come home with left-overs yet.

What is wondra flour?  Can whole wheat or all purpose flour be used?

Wondra flour is extra fine flour that claims to make lumpless gravy.  It does seem to work well when you want to be sure the sauce is especially smooth.  Regular white or whole wheat flour would work just as well.

I had only Wasa and brown rice vegan crackers, so I guessed at the amount.  It came out more like squash stuffing, but it was good.  Next time I'll use fewer crackers.  Used spelt flour--no problems.
