Rents El Famous BurritosIngredients (use vegan versions): 1 lb Firm Japanese Style Tofu
3 - 4 Tablespoons of Liquid Smoke
1 Packet of your favorite Taco Seasoning (check the ingredients)
1 - 12 beers (Please support your local microbrewery)
1 Can of your Favorite Vegetarian Refried Beans
1 - 2 Organic Tomatos (Finely Chopped)
1 - 2 White Onions (Finely Chopped)
1/2 Bunch Chopped Cilantro
1/2 Head Lettuce (Chopped)
Spicy peppery-things to taste (jalapenos, etc...it should burn)
vegan cheese substitute (optional)
1 Jar of Your Favorite Salsa (I prefer my own AWARD WINNING* home-made
salsa)
Low-fat Tortillas (Big Burrito Size)
Directions:1. Open and enjoy a beer.
2. Cube the Tofu - 1/4 inch in size. Saute the Tofu, Taco Seasoning, Liquid Smoke, and 3/4 of another beer (not the one you are enjoying) until thick. Keep warm.
3. Add the remainder of the beer to the Refried Beans as you warm them - in a seperate sauce pan (of course).
4. Make sure all the other ingredients are chopped - not the tortillas.
5. When you are ready to serve, lightly steam the tortillas. This step makes all the difference in the world. I simply put a little water in a pie pan and lay bamboo skewers over the top. Volla...steamed tortillas.
6. Assemble your Burrito.
Burrito assembly is a highly personal journey that, I believe, one should travel alone. Only then will happiness and self-fulfillment be found in ones own Burrito.
7. Finish off that 12 pack of beer.
8. Fall asleep happy and content.
*NOTE: My salsa is not really award winning...but it is perhaps the best salsa I've ever had. 30 Helens may even agree....
Serves: 3-4
Preparation time: 20 min (unless you use all 12 beers)
Nutrition Information: Lets see...you got your tofu group, you got your bean group, you got your beer group, and some veggies. Looks pretty nutritious to me.

No, Liquid Smoke really exists. My mom used it all the time I was growing up. Its a super concentrated liquid that gives food a smoky (a.k.a grilled) flavor. Good idea.

This recipe is more fun than one person should be allowed to have. Yes, liquid smoke lives! You can find it in a well stocked supermarket or gourmet food store.
