Laurens Yummy Stuffed French Toast

Ingredients (use vegan versions):

    3 thick slices of bread, preferrably cut your own to two inches thick
    1 package mori-nu soft tofu
    1 cup soy milk
    1 tablespoon vanilla extract
    1 tablespoon orange zest
    1 teaspoon cinnamon
    1 banana sliced up thin, tossed with a little orange juice and some cinnamon
    maple syrup, or top with cinnamon and sugar

Directions:

Take bread and slice a pocket into it.  Be careful to not cut all the way through as you will not want the stuffing to leak out overwhere.

In a blender blend up tofu, soymilk, vanilla, orange zest, and cinnamon.

When fully blended pour into shallow bowl.

Toss the banana slices with 1 tablespoon orange juice and a little cinnamon. You can also add some vegan brown sugar.

Stuff 1/3 of banana mix into each bread pocket carefully.

Dip the bread into the tofu blend and allow to soak up some up the flavors.  Make sure to get all areas covered.

In a skillet heat up a little oil or vegan margarine. Add the bread to the skillet for roughly 2-3 minutes per side, or until golden. Top with desired sweetner.

If you don't have thick bread you can do this same recipe but use the bananas as a topping.

Serves: 3

Preparation time: 20 minutes


You can use two bits of ordinary sliced bread, and use the tofu mixture plus a bit of oil to glue them together, it works alright.

also peanut butter could be used as glue on the edges of the bread. last comment: if you like it sweeter than just add sugar/syrup into the tofu mix. enjoy!

Great recipe! I made it with regular bread, not pocket bread, and the bananas in cinnamon and OJ were a great touch. I used regular silken tofu, which made the coating thicker and chewier and left the bread softer in the middle. Goes great with orange slices and tempeh bacon!

very yummy. my roomie likes the orange tangyness of the filling. i love how tender it is. instead of a pocked, i just sliced my bread really thick and then cut though most of the way and filled it.

wait, i forgot, i used a different "batter" recipe because i didn't have tofu on hand. the filling i did make-- it was really good. (batter i used was one of the soymik/flour ones on here)
