Hash BrownsIngredients (use vegan versions): 1 or 2 potatoes
Oil
Salt
Directions:Grate potatoes and mix with salt to taste. Add oil to large skillet and fry till golden brown.
Serves: 1 to 2
Preparation time: 5
Hash browns are best if cooked potatoes are used ( great for leftover spuds, they neednt be grated, chopped chunks are good.) Or, grate the spuds the night before and allow to soak in ice water overnight in fridg. The cook quicker and brown better at lower temps. Try adding green onion, garlic, tomato, herbs...sour cream if you must!

I agree with k. Leftover potatoes are great for these. I think salt is fine if you don't eat too much. Food is usually pretty bland without some salt on it.

whenever i fry potatoes, i just put them in the microwave to pre-cook them. This works fine. But for some reason, whenever i grate potatoes, they turn blue. (seriously!) It tastes really strange too. this does not happen when i cut them in big chunks. does anyone else have this problem? if so what do you do about it? I could grate them straight into the pan, but then they are undercooked, or if i leave them in longer they will burn. any suggestions?

emily: the reason they turn blue is that they are being exposed to oxygen. its perfectly normal

try squeezing a bit of lemon juice over the grated potatoes, or else keeping them submerged in water until they're ready to be used. your best bet is to just work very quickly.
