lois@slip.netCranberry Biscotti (Italian twice baked cookies)Ingredients (use vegan versions): 2 TB Cointreau
1/2 cup non-hydrogenated vegan margarine
3/4 cup vegan sugar
1/3 cup water
2 1/4 cup flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup dried cranberries
2/3 cup whole almonds
Directions:Cream margarine and vegan sugar. Beat in the water,Cointreau, baking powder, and salt. Then add the flour and finally the cranberries and nuts. On a greased baking sheet shape the dough into a loaf 3/4 inch high and 3 inches wide. Bake in a 325š oven for 35 minutes. Let cool for 5 to 10 minutes, then remove loaf from baking sheet and slice the loaf into 1/2 inch slices. Place slices on their bottom edge on cookie sheet, leaving a space between slices. Return to oven for 10 minutes or until the slices are just starting to turn golden. Cool and store in air tight container.
Serves: 2 dozen

I am a vegan who also doesn't use alcohol. What can I use in place of the Cointreau? Thanks for the recipe, it looks great.

Instead of Contreau, you can use about 1/2 tsp FRESH grated orange rind, and a bit of orange juice, probably to about the same liquid measure the alcohol would have been

I have made this twice to use up my cointreau before I move overseas but it is sooo popular with my non veggie colleagues! Thank you for this great recipe - but I must admit I love to have a few biscuits when they come out of the oven the first time!!!!

just made these - pretty good and easy recipe i substituted some orange juice with a few drops of orange extract for the cointreau this is definetely worth a try

Yum! I subbed fresh orange juice and a good amount of grated orange peel for the Cointreau (as suggested above). I can't stop eating them!

Highly recommended. These tasted great, especially the day after cooking. First time I mixed by hand, it was pretty hard work, after that I used the food processor. I found I needed a touch more water than the recipe suggests and I also replaced the almonds (I am allergic) with crushed brazil nuts.... Give these biscuits a try, you won't be sorry

these were pretty good, but i had some problems cutting them (they were cool and i was being real gentle but they wanted to fall apart) and they took a good 20 minutes to get golden brown and crisp at the end. i dipped some of them in chocolate when they were cool and they were tasty as hell.
