Broccoli-Tofu Stirfry with Almonds

Ingredients (use vegan versions):

    500 g broccoli
    150 g firm seasoned tofu
    50 g chopped almonds
    4-5 spring onions
    1-2 cloves garlic
    3 tablespoon soy sauce
    2 tablespoon sake or dry sherry
    pepper or cayenne pepper to taste
    1 teaspoon sugar
    vegetable oil
    sesame oil

Directions:

Cut broccoli into small florets, peel the stalks and cut into cubes. Cut tofu into small cubes and spring onions into 2-cm (1-inch) pieces. Cut garlic into very small pieces.

Mix soy sauce with sake/sherry and vegan sugar.

Heat a wok or large saucepan. Add three tbsp. of vegetable oil and 1 tbsp. of sesame oil. Stirfry broccoli first, then add tofu, then garlic, almonds and spring onions. Stir until everything is done. Add the soy sauce mixture, season with pepper/cayenne pepper.

Serve with pasta or rice.

Serves: 4

I haven't seen seasoned tofu, but I have seen herbed tofu at places like Trader Joes.

you can get it at just about any healthfood store.. its usually called mock chicken or some other sort of meat.  you should try this with chicken-style seitan.. yum yum!

soyboy makes a great seasoned tofu. i think carribean is the best. its spicy and would work well in a stir fry, but i usually make a tofu salad with it. it can be found at vegan bread and circus (whole foods market).

you can get seasoned tofu at super walmart.  I like to use azumaya brand zesty galic flavored tofu... it really isn't over garlicy, its  tastes really good in stirfry.  They also have teriyaki flavored, and some others.  But try it, its so good.

Where can we get vegan sugar? can i use normal sugar instead of vegan sugar? i am planning to cook this for my practical examination.

We love this recipe.  It's so easy and tasty!  I've used regular firm tofu, as well as various marinated and baked tofus, since I've never been able to find something called "seasoned tofu" per se.  It all works out great though.  I've also made it without sake or sherry (or substituted in dry wine for sherry) and it also turns out fine.
