Caribbean Curry

Ingredients (use vegan versions):

    2 bananas
    oil/margarine to fry bananas
    2 sliced onions
    3-4 garlic cloves
    1 tart apple, chopped
    1 1/2 teaspoon grated lemon peel
    1 teaspoon ground ginger
    11/2 teaspoon ground coriander
    1/8 teaspoon turmeric
    1/4 - 1/2 teaspoon red pepper
    1/4 - 1/2 teaspoon cumin
    1 can black eyed peas (drained and rinsed)
    1 can kidney beans (undrained)
    1/2 cup water, white grape, or peach juice (or equivilant in dried form)
    1/4 cup chopped peanuts
    3 cup cooked rice

Directions:

Cut bananas lengthwise and then in half.  Fry over high heat until lightly brown on each side.  Set aside.

Saute onion, garlic and apple together.  Stir in spices and lemon peel.

Add kidney beans, black eyed peas, and liquid.  Simmer for about 15 minutes.

Top with peanuts.  Serve with rice and bananas.

Green beans with peanut sauce accompanies this dish nicely.

No leftovers.

Serves: 4


i tried this recipe last nite, and it was wonderful.  i used northern beans instead of black-eyed.

Yummy!  What a great dish, and it is a quick one to whip up.  The only addition that I made, was to use 3 bananas, 1 1/2 apples and a dash of sea salt.  Also, I prepared the bananas last, so they were warm (personal preference).  Thanks for recommending a tasty recipe that new vegans can appreciate.

This is delicious! Great! If you want your bananas firm and not oversweet, don't get really ripe ones. I did, and they turned to mush. I didn't mind, but some of you might. Whoever invented this recipe, contribute more. Excellent.

I just tried this recipe and I must say that its excellent! I am an avid vegan chef and don't usually follow recipes but I found this one to be very good. Howe'ver, I did add my own small nuances to this superb dish. I combined the bananas, rice and bean stirfry together. It made for a very sweet yet saucy caribbean flavor. Now all I need is a vegan ginger beer, clear blue skies and a fat s_____. . .to make this caribbean dish complete.

This recipe was really great! My boyfriend loved it. I made a few small modifications to it: I used coconut oil to saute the onions, apples, and garlic. I added the spices (with a little extra curry) and used 2 cans of red kidney beans (drained). I then added some water, sparkling cider, and coconut milk. I also used coconut oil to fry the bananas(at the end, as another suggested), and I used my blender to chop the peanuts!! It was absolutely fabulous!! It tasted great with the bananas cut up and mixed in with the curry.

I too loved this recipe.  I used great northern beans instead of black-eyed peas.  We didn't like the bananas so next time I would just leave them out.

This was awesome! I added some chopped carrots for extra nutrition.  The fried banana was a nice touch, although it would be tasty without it too.  The chopped peanuts really enhance the recipe so definitely don't skimp on those.

This was delicious! The banana was an interisting and yummy addition and I served it with quinoa instead of rice. I never would've thought of sauteing onions with apple. I will definitely make this again!

also i don't have organic lemons here, but i have organic orange peel in a jar... I used that instead and I hope that doesn't alter the integrity of this Caribbean dish. im sure it doesn't. anyway,..

I found this dish to be a bit bland. If I try it again, which I may not, I think I'll add some cinammon and some lemon juice. The beans were a too dry over the rice so maybe I'll saute them in some veggie broth or more juice.

alright one thing, im making this for the second time and it has occurred to me, where is the curry in the recipe? i added curry the first time without thinking, but you know, this recipe doesn't actually call for it. Whaa??

I am a new vegetarian (3 months) I live in the Caribbean and was drawn to this recipe because of the name. I haven't tried it as yet so I'll make it for Sunday dinner...I'll post my results. I'm not a huge fan of bananas, so I'll fry some plantains instead (which is almost always on the lunch and dinner table for most Caribbean people). As I've said...I'll try it with the variation and post.

kaitebrown - the currycomponent is simply the combination of spices - cumin, coriander, turmeric, red pepper& ginger.  curry powder is made from various combinations of spices

another thing, i would expect that this recipe would call for plantains instead of bananas anyway, particularly BECAUSE its titled as Caribbean. interesting. i guess they eat fried bananas there too? i would think they don't if they fry plantains. hmm.. well anyhow, fried banana is good stuff. to be eaten on special occasion, but good stuff indeed.

any nut you like. its not critical. anything that sounds like it might go well with this. walnuts, pecans, cashews...

This sounded wonderful but it turned out to be very bland and tasteless.  Ended up throwing everything back in the pan, adding salt, lots more spices, plus quite a bit of curry powder, which added some flavor.  Dont think I'll make this again.

this recipe did not skimp on the flavor at all! i followed the recipe almost perfectly, but used 5 cloves of garlic, and two teaspoons fresh grated ginger. the bananas were the best thing , so i made an extra two to top the dish off. also, i am a HUGE fan of peanuts, so i  chopped up way more than this recipe called for.

oh, and i used white grape peach juice for liquid. this was FANTASTIC and all of my meat eating friends loved it, too! thank you for this, i will be making it tons Smiley

Pretty tasty! However, I doubled the amount of the spices and added about 1 tsp. of curry powder in lieu of the turmeric (I was out, but I think the curry powder is better anyway). I wouldn't recommend doubling the red pepper though, because it was pretty spicy (and I LOVE really spicy food) -- I would stick to 1/2 tsp. of red pepper. I also subbed white wine for the juice, a can of black beans and a can of pinto for the black-eyed peas/kidney beans, and plantains instead of bananas. Highly recommend all those changes! Thanks!

Pretty good.  The bananas make this dish in my opinion.  The sweetness they add is delicious (although my husband preferred no bananas in his--fine, just means more for me!).  I doubled the spices and also used coconut milk as the liquid as someone suggested.

this was really bland and a big disappointment, even when I doubled the spices.  my dinner guest was really let down, too.  I added more curry powder and garam masala and packed the leftovers in my lunches, but I definitely wouldn't serve this to any guests.  I guess my expectations were too high - I had been looking forward to making this for a really long time.

p.s.  I used pineapple juice, secondbase.

i'm curious as to what liquids you used? i can't imagine you finding this dish bland when made with coconut milk or white grape peach juice! with water, however.... ehhh. anyway, i'm just curious!

this is so so so good.  i used cayenne powder instead of regular ground red pepper, and cashews in place of peanuts.  i could literally eat the entire pot of this curry.  thanks for making my day.  5 stars++++

I loved this recipe!  Next time I'm going to add more juice and use a Fuji apple instead of a granny smith though, the tang was a bit too much for our tastes.  We served this over jasmine rice.  MMM!

I didn't care for this.  There didn't seem to be much flavor and the flavors that were there didn't go together to me.  IF I made it again, I would probably only use one can of beans.

I added a tiny bit of cornstarch to the juice to thicken it up a little. Jeez this dish was amazingly different, strange unique and totally awesome.  Fruity and spicy, mushy bananas with crunchy apples, and the beans and onions etc. really balance it out.  AWESOME dish.  will make again

Wow! So I made this recipe again with a few modifications, and it is WAY better than the last time I made it.

Here are the modifications:
1. I used freshly cooked chickpeas.... made a HUGE difference! I cooked them overnight in the slow cooker and wowie! They were nice and buttery when I put them in the curry.

2. I used 1/3 can coconut milk for the liquid, this was FANT-ABULOUS!  Thumbs Up

3. I added half of a cooked sweet potato (and the liquid).

4. I added a tablespoon or of Madras Curry Powder.

salt to taste

I only used about a half of a large onion (hey they're expensive) and I followed the rest of the directions almost exactly.

(my previous review is in the archives under sunsoleiAria... last time I used canned kidney beans cuz i'm not a fan of black eyed peas... and whoa garbanzo beans & coconut milk are WAY better for this)

This recipe was very flavorful and easy to make....The bananas added a sweet flavor which was delicious.  I might try to substitute mangos for the bananas next time for a different sweet flavor.   Smiley
