Red Chard Rollups

Ingredients (use vegan versions):

    brown rice (cooked)
    pine nuts
    raisins
    parsley
    garlic paste
    salt
    olive oil
    lemon juice
    rice vinegar (just a teeny bit)
    red or swiss chard leaves

Directions:

Amounts are approximate.

To about one cup of rice, add two tablespoons pine nuts, two tablespoons raisins, 1/2 tsp parsley, 1/8 tsp garlic paste, salt to taste, a sprinkle of rice vinegar, two and a half teaspoons lemon juice, 1 1/2 tablespoons olive oil, and mix well.  Remove the chard stems where the leaf begins.  Place approximately two tablespoons approximately one inch away from the edges.  Roll like a tamale. Be very gentle while you are rolling, as the thick stem tends to crack and/or break through the leaves.  Place seam side down in a steamer.  Repeat until the rice mixture is spent.

Place the steamer in a pan with one inch of water in the bottom and cover. Steam until the chard leaves are dark green.

Serves: as many as you want

Preparation time: not too long

Nutrition Information: good iron, folic acid, calcium, etc.

Marymoon, is it true you don't eat meat but you sure like the bone?  haha!! Sorry, I couldnt resist...I always loved that song!  The recipe is quite tastey...one addition though:  I steamed the leaves slightly to make them easier to roll.

Very good, I rolled the chard lengthwise, seemed easier. Next time I make it, I'll make more rice mixture so there's enough to roll lengthwise. This made only 4 chards. Too yummy to have so few!

I've been trying to cook healthier meals for my family by using a wider variety of vegetables, and reducing the amount of meat and dairy we eat.  I bought red chard not knowing how to prepare it.  I looked up this recipe and tried it. I loved it!  All my family (except the youngest) liked it--which is saying a lot for meat eaters like us!

pretty good, maybe add a little more seasoning that recommended in directions. definitely steam the chard leaves before. a good idea and tasty with a little tweaking. thanks

These were delicious. Be careful scooping 'em up after steaming or they may fall apart. Soooooooo good though, I want some right now! Shocked

Tasty indeed. My chard leaves were too fragile to use for rolling up, so I just threw it all together, paella-style. I also didn't have garlic paste, so I used garlic powder instead. Still very tasty!
