Applesauce Spice Cake

Ingredients (use vegan versions):

    1/2 cup molasses
    1 cup applesauce
    1 teaspoon cinnamon
    1/2 teaspoon cloves
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1 3/4 cup flour (I use whole wheat pastry flour)
    2 teaspoon ginger (optional)

Directions:

Combine the molasses and applesauce in a large bowl.  Combine remaining ingredients and stir into the liquid.  (If the batter seems very dry, add a little more applesauce or a little water.)  Bake in a nonstick or pan-sprayed 8*8-inch baking pan, in a 350 degree oven, for 30-45 minutes or until it tests done.

The optional ginger makes an acceptable gingerbread.  I have also had success leaving out the ginger and adding 3 or 4 tablespoons of cocoa (I guess you could use carob) to make a tasty but not very sweet or rich chocolate cake.  If you use cocoa you might need to add extra sweetening, but that depends on your taste.


this was really REALLY good.  i made up a glaze to go with it...  i used some applesauce..molassas..and some raw cane vegan sugar...to a glaze consistancy and put it on top and it was really incredible.

This cake is so easy and so good! In fact, I like it better than the applesause gumdrop cake I used to make in my pre-veg days. Next time I make this I'll play around with it and see how it is as a gumdrop cake. Seems to me it might make a nice fruit cake, too.  Peace and Love.

Have you tried using apple butter instead of regular frosting?  I think for a cake like this it might work pretty well.  Good luck.

Yummy!  I added a dash of salt, some rice milk powder, and a few teaspoons of oil.  The texture turned out great.  It could have used a little more flavor.  I think next time I would add more cinnamon and some nuts.

As one is won't to do, I experimented a bit--adding some crushed walnuts, a dash of salt, a tbsp of oil, and a smashed banana. It came out delicious! Thanks for the inspiration!

Good (vegitarian) gravy!  This is one hell of an awesome cake!  I make it for my sister who is a total carnivore and she ADORES it!  I've taken to making this a couple of times a month because a piece or two with some Chai and an apple makes one hell of a breakfast!  It definitely needs the ginger for a little extra kick (though I've never tried it with cacao...)  Tonight I will add a little cardamom to it and see how that goes as well :-) Thank you!  This is a staple at my place now!  :-)

Oh my - this is tasty!! I am eating some right now. I used a tsp of ground ginger root powder and cinnamon applesauce, and also added a tablespoon of oil, a little salt and a 1/2 cup or so of chopped up walnuts. I agree with Lizzidi - it definately needs the ginger to play up the other spices. This would be a good thing to bring to a brunch - it would blow away any other coffee cake. I love easy yummy recipes like this - thanks a bunch!

Very tasty!  I added the ginger as suggested, subbed allspice for the cloves (it's what I had on hand) and sprinkled the top with brown sugar before baking which turned out very yummy.  I was going to add nuts and forgot, but I'll definitely be making it again so next time!

I think I must have made a mistake making this because everyone else seems to think this cake is really good.  This was not edible when I made it.  I couldn't even take one bite.  I'm sure the recipe is good I just must have made an terrible mistake somewhere.   Tongue
