Samosas

Ingredients (use vegan versions):

    For Dough:
    1 cup flour
    3 tablespoon oil
    salt-as per taste
    For Stuffing:
    1/4 cup green peas
    oil-for frying
    1 teaspoon cumin seeds
    1 teaspoon ginger paste
    1 or 2 chopped green chilies
    3 medium potatoes boiled and mashed
    1 teaspoon red chilli powder
    1 teaspoon dry mango powder
    1/2 teaspoon garam masala

Directions:

1. Mix the dough ingredients. Add very little water and make a hard dough. Keep it under a moist cloth for 30 mins.

2. Cook green peas in salted boiling water. Drain the water.

3. Heat little oil in pan and add cumin seeds. When they start to change colour add green chilies, ginger, potatoes and peas. Add salt, red chilli powder, mango powder and garam masala. Stir well.

4. Sprinkle little water and cook for 1-2 mins.

5. Divide the dough into 8 portions and roll them into balls.

6. Apply little flour and roll them out.

7. Cut it in to half and apply water on the edges of the diameter to shape it into cones. Stuff it with the potato stuffing. Seal the edges again using water as a glue.

8. Deep fry on medium heat till crisp and golden brown.

(Can be frozen before frying)

Serves: 16

Preparation time: 1 hour

mmmm... samosas.. these were really yummy.. but samosas always are and are pretty hard to mess up Wink .. heres what i changed (cuz i always change something hehe) i added a bunch of garlic powder.. i didnt have the mango powder or garam masala, so i just added a tablespoon of curry powder instead.. i also added a chopped onion and some sesame seeds.. for the dough i used coconut oil and added a little bit of baking powder since i baked these instead of fried them.. all in all they were/are very good.. i dipped them in some tamarind-date chutney and put a leaf or two of cilantro on each bite.. yummy yummy yummy  Thumbs Up

I used the dough recipe from here so I'll comment on that. It was GREAT! I used whole wheat flour and it was spectacular. I don't how much water I used to hold everything together but it seemed to work. I also added a little baking powder.

One thing I will say--I don't know how to get 16 samosas out of that batch--I like my samosas big (reminds me of this place I used to get samosas all the time in college). I made 8 instead of 16--some of them were a decent size, but I'd rather have a little big than way too tiny.
