Coles Original Flax-Chocolate Chip-Pumpkin MuffinsIngredients (use vegan versions): 1 1/4 cups whole-wheat flour
1/2 cup wheat bran
1 cup ground flax seeds
1/2 cup wheat germ
1 tablespoon baking powder
1 teaspoon baking soda
1 cup soy milk or vegan yogurt
1 1/2 cups vegan pumpkin puree
1/2 cup Sucanat
1/2 cup vegan chocolate chips
Directions:This is my favorite muffin recipe! I make them all the time for my sister and my brothers and we take them to school for lunch.
Preheat oven to 400F. Line twelve muffins cups with paper liners. In large bowl, whisk together flour, bran, flax, wheat germ, baking powder, and baking soda. In a medium bowl, whisk together soymilk or vegan yogurt, pumpkin, Sucanat, and vegan chocolate chips. Add wet mixture to dry mixture and stir just until combined. Spoon into muffin cups (a large ice-cream scoop works best) and bake for 12-15 minutes or until tester comes out clean.
Warning: Double the recipe...They disappear really fast (and freeze very well just in case they don't)!!
Serves: 12
Preparation time: 10 minutes + baking
I was very excited about these but they were terrible. They never rose, were flat and somewhat tasteless (even tho i added some spices as well).
