Survey for a proposed cookbook of my own...

I need your input here.  I am working on a cookbook, tenatively titled:  Dragonfly's Vegan Blue Plate Specials.

I see these fusion cuisine vegan cookbooks, I am not thrilled by them.  I have not found one that gave me all of the old American favorites, so I think there may be a niche to fill.  To that end, I want to know what was your favorite nonvegan diner / cafe food that you miss.  I am thinking of a healthy vegan way to make these things. 

I am thinking of meatloaf and fixings...burgers with transfat laden fries...hot beef sandwiches, spaghetti with sausages, biscuits and gravy and that sort of thing.  Now, it should be noted, I might miss them, but I would not eat them!  I am looking at healthy and fast, no transfats, no high fructose corn syrup, less sugar, less fat in general. 

What do you all think? What diner foods can you think of that I can go to work on?  I already know how to make a chikun fried steak vegan, but what else can you all think of?  I am open to suggestions and ideas to add to my own.  You all are so helpful and so full of ideas, let me have it!

This is horrible, but... The Monticristo (turkey,ham, tomato & cheese - all beer-battered & fried, served with a little powdered sugar & maybe some jelly.)  Good Lord! It's a heart attack on a plate!
Lots of sandwiches - I used to love BLTs & turkey sandwiches
What about tons of soups - mushroom & barley, unckn noodle, French onion soup (with "cheese" on top?), vegetable soup, "clam" chowder (red & white), corn chowder...

Oh, here's another vote for a healthier, whole-grain stroganoff-- with a really tangy sour-"cream" sauce.

My mom makes dumplins and a chicken casserole for Christmas every year.  This is probably the only time I miss meat.   Oh, except when I go to a baseball game and the person next to me is eating a brat covered in saurkrat and mustard.... :P    Do vegan brats exist?

Edit - Forgot something.  I used to drink those International Cafe beverages a lot, where you just add hot water.  A vegan mix for these would be awesome.  :)

Awesome idea!  I'm a sucker for comfort foods - the good 'ol down home cookin'.  :)  I'd loooove to see a cookbook stay away from tons of nut yeast, fake-food stuffs and difficult to find ingredients.  Because technically, "down home" foods are generally simple recipes with minimal ingredients anyway.  I'd be highly disappointed to see a comfort food cookbook with a million things that I can't find or only use for one or two recipes.

waffles/pancakes
breakfast sandwiches - on biscuits or english muffins
any breakfast casserole - like quiche type things
sausage gravy & biscuits
sandwiches - BLT, rueben, veggie burger, etc.
meatloaf
stews/soups - veggie, unbeef stew, split pea, onion, chowders, etc.
casseroles/pasta - stroganoff, lasagna, mac n cheeze
green bean casserole
stuffings
bread pudding

Dang, I'm hungry now!!
