Shortbread!! We used to get Walker's brand, but started making our own last year. I guess I won't get to have it this year. I went vegan as of 7:45 this morning!

Sugar cookies sound like they're really popular but my favourite is shortbread, sans the butter of course!
My grandmother would always make pizzelle cookies which I loved, loved, loved! They're Italian round waffle shaped cookies that you can flavor with just about any extract, zest or cocoa powder.
Mine never turned out as good as hers and store bought ones taste like cardboard no matter the flavor. Now that I'm vegan, I'll have to experiment with the recipe one day. Hers were the best and I sure do miss them...

My grandmother's date cookies. Walnuts, dates, shredded coconut, crispy rice cereal... mmm! During the holidays I always ask for her to make me a tin full of them.

Dutchess Cookies - its kinda chewy almond meringue sandwiched together with swiss chocolate. Now we just need to figure out how to veganize them..........

Really I love holiday cookie time. Why? Because it's the only time of the year when my mother takes time off of work and doesn't end up working anyway. She actually does things (like make cookies!) with me. I love it.
Oatmeal cookies w/ dried fruit. But if I could ever find the fabled vegan butterscotch chip, I could make oatmeal scotchies! The best cookie ever!
