Tofurkey. I don't eat processed fake meat products very much so it really makes the Tofurkey that much special. Other than that, asparagus!

I've only ever had one thanksvegan, last year with Theo, and we had chickpea/cranberry pies which were pretty mean.

Roasted organic acorn squash with roasted pecan stuffing! Vegan and gluten free... yummmy! The roasted acorn squash look amazing on the table and the roasted pecans provide that holiday scent.

I'm making my very first tofu turkey this year! Wish me luck hehe I have a beautiful cornucopia basket that I stuff with fresh colorful veggies, it's beautiful!

I make a seitan roast with a sage stuffing. Roll it up like a jelly roll and cover it with dried sheets of tofu that have been soaked in broth to soften them. Of course it's served with gravy. My family doesn't like those store bought tofurkys!

Once I had a stuffed acorn squash (with wild rice, nuts, dried fruit, etc) which was so delicious.  Another time I had a Tofurky (from a box) and it was terrible.  Now I am thinking I have to make this: http://mobettavegan.blogspot.com/2010/11/veganmofo-iv-like-meat-cake-burnin-in.html

We loves the tofurky, you just have to put a good marinade/baste on it. If it were up to me, I'd just eat stuffing and sweet potatoes and rolls, and be happy and fat...

My favorite centerpiece is a pumpkin - either glass with a candle, or real, wth cornbread stuffing! I love the round shape and vibrant color.

Veggie lasagne is always fun for Thanksgiving.  Use butternut squash in keeping with the season, or just be creative!

I love Tofurkey. Even my omni-husband loves Tofurkey. I introduced my step-mom to it this year and now she loves Tofurkey. It's a good thing I only eat it once a year, because I'd probably eat it every day if I let myself.

Stuffing all the way!  Preferably with cranberries and walnuts, stuffed inside a baked pumpkin.  YUM.
