It is so funny that you guys talk about slow cookers this week when I'm planning to make my significant other dinner this weekend and was planning to use my slow cooker and looking for recipes. I decided I want to make an African Stew based off a recipe from the Disney Restaurant Boma (which is amazing)..I'm feelin a little exotic ;)
I love my crockpot! I am a fairly new vegan, so I am learning new recipes to make in the crockpot. Tortilla soup is one of my favorites. Here is the recipe.

Vegetarian Minestrone soup. It is so thick and hearty, it's actually more like a stew. Wonderful with a grilled cheez sandwich after a long day at work.

I dig slow-cooking a big crock pot of split pea soup with carrots, spiced up with black pepper, fresh garlic, Bragg's, and paprika.

My favorite slow-cooker (or crock-pot...same thing) recipe would have to be baked beans. There's so many variations! And moreover, no one could (or should) eat a whole crock-pot's worth, so you get so many future meals from one simple recipe-- just throw the leftovers in portion-sized, repurposed plastic containers (like from your earth balance spread) and voila! 3 weeks later, more beans!

CHILI!! :) I actually just picked up a vegan slow cooker recipe book since it is so damn cold where I'm at now.
well #1 for me is brown sugar baked beans ,white beans , onion garlic ,bell peppers all minced up with vegi broth brown sugar and tomato paste added at the end of cooking time ;)b
my slow cooker definitely gets used the most regularly to make re-fried beans to stock up my freezer : )
or if it's for a meal, chilli is always a win : )

My mum makes these awesome candied sweet potatoes in the crockpot for holidays (a recipe that she FINALLY made vegan for us...). So those :) yum...I always have that for dessert rather than sweets!
