You know what's the most awesome? When one of our own goes big time! I'm talking about the amazing Quintess (http://vegweb.com/index.php?action=profile;u=69134), and her new book, The Two-Week Wellness Solution: The Fast Track to Permanent Weight Loss and Vitality (http://ow.ly/2eEyd). Quintess has been a VegWeb member since early 2007, and has contributed so much to the site, I can't even begin to explain her awesomeness. Not only that, her recipes and insight are two of the things that make VegWeb such a fantastic place to be. Her book is a reflection of her fabulousness, <em>and</em> filled with delicious recipes, tips, and eating plans to help us all live the healthiest, happiest life possible. To boot, there's a completely inspirational forward from Dr. Neal Barnard. Yay Quintess!

my favorite is "crockpot couscous" from right here at vegweb...I have made it many times, and even my Hubby loves it,,,,it makes the house smell good too

Crockpot Couscous

Ingredients (use vegan versions):

    1 tablespoon dried onion flakes
    2 carrots chopped
    1 can diced tomatoes
    1 can garbanzos drained
    1 veggie bouillon cube
    1 tablespoon diced garlic
    1/4 teaspoon nutmeg
    1/4 teaspoon cinnamon
    1 teaspoon cumin
    1/2 teaspoon tumeric
    1/4 cup raisins
    1 1/2 cups cooked couscous

Directions:

Put all ingredients except for couscous into the crockpot. I usually spray the crockpot with pam, so the mixture dosnt stick. Cover and put on the high setting for 3 hours.  After  3 hours, stir the mixture, shut off the crockpot, and then add the cooked couscous. Let set for 10 minutes.

Serves: 4-6

Preparation time: 3 hours

It's gotta be veg*nized French Onion Soup ... letting those onions caramelize over that low heat for hours ... delicious! And then adding in some veggie broth ... ooooh, that's amazing!

Baked beans come in second, though :D

This is probabaly boring....but I love throwing a whole bunch of different veggies (esp red skin potatoes) in the crock pot with some veg stock!!  Yum yum!!

I got the book last week and I love it! Thanks so much, Laura and company! Tess, I do love it, and am so glad it's a book about health and weight loss! So often these contests seem to be for food, food, and more food--usually unhealthy food--so it's pretty ironic and wonderful that I win, it's a book and not food, and it's a book about weight loss. Yay, me!  :>
