Not to toot AC's horn, but Andy and I both love her Asian Noodles w/ Peanut Butter and Chilies.....we make it at least once a week....whenever we're short on time, or just craving it!

My current favorite speedy meals are crispy burritos (or flat quesadilla type things), or hummus.

I just recently have started making this for breakfast and love it... Brown rice w/some chopped up bean sprouts and a tbsp or 2 of braggs!  the sprouts give a bit of a crunch with the awesome chewyness of the rice.   ;)b

a can of black beans mixed with a can of tomatoes and some spices.  Pretty good when you're in a hurry.

Whole wheat pasta tossed with balsamic vinegar, olive oil, diced avocado and tomato dusted with a little garlic salt.

red wine vinaigrette, italian herb and braggs tempeh with brown rice.
It reminds me of something else, but I'm not sure what.
soooo good and quick. I just marinate it in the morning and make it at night in 2 minutes. :)

Speedy speedy!! PB&J is probably the fastest and tastiest! And they travel great--you could put one in that fancy messenger bag and have a tasty lunch on the go <3

Burritos!  ...with guacamole, salsa, refried beans, in a whole grain wrap...  are totally my speedy & delicious meal of choice.

My favorite Speedy Meal? Hmmm I think it'd have to be a super simple veggie wrap packed with cucumbers, mushrooms, and tomatoes :)

Leftover rice (I always have leftover rice) fried up with diced onion, a lot of crushed or dried and granulated garlic, cut up veggie burgers, seasoning salt, corn, chopped carrot, dried chili peppers to make as spicy as you like, and any other vegetables you might have on hand. But that is the basic recipe. The burger chunks are cooked until they're kind of crispy. I like the ones that are hamburger-y, but sometimes change it up with pieces of spicy bean burgers. Much yummier than it may sound. And quick.

I have to pick just one?! I guess that would have to be my fastest and favorite sandwich - Diced green chiles (quickly fried/ sauteed) mixed with some sprinkles of dried basil laid out on some toasted bread (my favorite ciabatta) spread with cream cheese. Mmmmmm

I LOVE oatmeal! It only takes 2 minutes in the microwave, and I can add all sorts of things to it depending on my morning rush.... different flavor extracts (vanilla, almond, black walnut, even rum!), flax seeds, fresh or dried fruits, brown sugar, agave, cinnamon, nutmeg, cardamom, nuts and nut butters... the list goes on and on, my friend.

I'm always down for a quick mapo tofu over rice- like in my profile pic!
Diced tofu, garlic, peas, and mushrooms cooked with an easy soy, chili garlic sauce, veggie "oyster sauce," and some cornstarch and water to thicken and scallions and sesame oil to top!

Another burrito fan here! beans, avocado, salsa, peppers and onions if i have a little more time... yum!
