My favorite meal is actually one I found on the side of a can of garbanzo beans. You basically just throw together some chopped up onions or shallots, chopped tomatoes (or canned tomatoes), a can of chickpeas, two medium zucchini chopped up, and saute it all in some oil. Then after 5 minutes sprinkle 4 tablespoons of mint flakes, 1 tablespoon of oregano, some salt and pepper and serve over rice or couscous. It has a really delicious taste to it . . . kind of Greek tasting and you can fool people into thinking it was a lot more complicated than it was!  ;)b

Pasta salad.  You can chop the veggies in the time it takes to cook the pasta, toss it all together with the dressing, and go.  I usually do an Italian-style one with any or all of the following: fresh tomatoes, sun dried tomatoes, cucumber, bell pepper, broccoli, avocado, kalamata olives, mushrooms, and pickled chilies, with a simple oil and vinegar (red wine or balsamic) dressing.  It tastes better after it sits for a while though...so it's one of those "what can I take to work?" recipes.  If I'm really in a hurry (or just lazy) I've been known to make a meal out of chips and salsa and/or guacamole.

Black Beans and rice -
Already cooked black beans (or rinsed canned)
garlic, oregano and cider vinegar
sauteed onions and a little bit of finely chopped green pepper
left over rice to serve.  Yum.  I'm hungry just thinking about it.

Imagine has wonderful varieties of soup, particularly the pea soup, rich, thick and creamy. I like to add some onion rings or leftover rice to it.  :)

are you looking for a speedy vegan meal. . . microwave a boca vegan burger, top it with ketchup or your favorite topping and sprinkle liberally with nutritional yeast. . . have some organic veggies of your choice from the frozen food section. . . enjoy!

vegan tvp tacos (tvp + veg. beef broth + chili powder, red onions, tomatoes, spinach, and taco shells) are great when you have no time. Especially when I have homemade guac tucked away in the freezer for such an occasion :)

I got this from  Peta's College Cookbook.....

1 can Black Beans rinsed
1 can crushed tomatoes
Hot Sauce
Mixed together and put in a sweet potato with a dollop of soy sour cream...I LOVE IT!!

My favorite speedy meal varies with the season and whatever I bought at the farmers' market. This week it's a sweet potato,  microwaved till it's soft, and topped with a cut-up apple cooked with a little water, turbinado sugar, cinnamon, cardamom, and whatever dried fruit I have handy -- figs or raisins or prunes. The apple is usually done by the time the sweet potato finishes cooking. Pour the apple mixture over the smashed sweet potato, and it's dinner and dessert all at once!

Easiest meal ever: a single can of beans!

Take a can opener, open can, pour into bowl.
Salt, pepper.
Garlic powder and red pepper flakes if you're feeling snazzy.
DELISH!

Anything in a tortilla, so I can eat it in the car. I like cream cheese, tofurky, avocado and sprouts, or refried beans mixed w/ soyrizo and cholula. YUM!!!!

a very quick dinner I love is called rockin moroccan stew- I had the recipe put up but it's now missing. The picture is up though.  it's a simple dinner and very tasty.
This is pretty much the recipe right here:

can of chickpeas
carrots and onion sliced sauted in olive oil
can of organic crushed tomatoes + 1 can of water
1 box of raisins
spices- cumin tumeric and salt

You could serve on top of left over couscous.

Fave quick dinner is usually veggies in some sort of creamy sauce -- I'll often riff on Ron Pickarski's recipes for Tofu Bonne Femme or Tofu Friccasee from his cookbooks.  Essentially, onions plus three or four veggies, chopped and sauteed, then simmered in a soymilk cream sauce with cubes of fried or poached tofu or tempeh added.  Usually spiced with either garlic, white wine, and a touch of basil or thyme, or with nutritional yeast, liquid smoke, garlic  and paprika.  One pan, takes less than 15 minutes, and tastes fantastic.

Pita pizza - sauce, olives, sundried tomatoes and FYH cheese on pita bread. Quick and yummy, with only the plate to clean afterward.
