Parma (www.eatintheraw.com) is a nutty, cheesy, rich condiment that can be tossed on top of anything and make it ten times better. It is is my latest obsession. I was introduced to it during lunch at VegNews, where it is an office staple/addiction. They put it on everything, from popcorn to salads to pasta, and have made me a true convert/obsessed crazy person. I'm now buying it in bulk. I wish that were a lie. I've made it a few times (with eb and soymilk of course) before just sprinkling plain old nutritional yeast in between the layers and on top, but I really think it needs the zazz of something parm-y.
OMG my husband and i love this stuff..... our biggest challenge in becoming vegan was giving up parmesan cheese. we literally dumped it on everything -- pizza, spaghetti, tacos, etc -- and without parma i don't know what the heck we'd do :-\
i REALLY want to try dumping some parma on my new favorite vegan chili ... perhaps in the form of a chili dog >:D

Right now I am making sweet dumpling squash halves and I'm going to pour a delicious chili I made on top. The chili is made with pinto beans & tempeh and seasoned with chili powder, cumin, garlic, smoked paprika and a little cocoa. Very yummy and yes I would like some parma on top!
I used to put parm on a buttered bagel. Now I use nutritional yeast, but I wanna try this!

Haha. Last night i had a conversation with my brother about vegan parmesan and how he wanted to try it. It would most definitely go on this pasta with tomatoes and olives i always make for my family. They've wanted me to track down some vegan cheese to put on it because they miss it that way. So that would be the first thing i would do!!
