I would ask about vital wheat gluten.  Does it go bad, when should it start getting stretchy and elasticy when you are kneading it in preparation to make seitan, and what is your favorite recipe/s?

I want to ask for a good vegan pumpkin cheesecake recipe. I've made a bunch, and some of them have been good... but nothing near close to the dairy-containing variety. I want something that can fool those omnis.

Well, if chat didnt freeze up my interwebs (errrrrrrrrr.) I'd want to ask ideas for simple pies fit for thanksgiving that would impress omnis who love buttery/dairy filled things. I've never made a pie and want advice!

I would ask for tips on getting my extended omni family members to try vegan dishes at Thanksgiving.  It's a potluck and everyone brings their "regular" dishes and I bring a few vegan dishes, but no one will try mine if they're obviously vegan.  For instance, they will go straight to the turkey rather than trying tofurky.

seiten and I are in that awkward just met stage!  I mean, we have met at restaurants, but not intimately got to know each other

like cammers, I'd ask about seitan. I see recipes that involve boiling, baking, steaming, pan-frying, and combinations of those, but I'm not sure which is best for getting the type of texture in fake meat products from the store. Most recipes are too squishy for me.

I would ask for advice on making a pumpkin pie with an actual whole pumpkin and not canned pumpkin. 

Is it worth the extra trouble?  Can I use any vegan pumpkin pie recipe that calls for canned and replace it with my own mashed pumpkin?  Do I need additional spices?  Do I need to bake it longer?

I would ask about what to make for my 1st vegan thanksgiving... which "turkey" recipe I should use that would be relatively and a good stuffing recipe to compliment it.  Also I'd like to ask about pumpkin bread muffins and what is a good recipe for that.

I would ask what dishes actually epitomise Thanksgiving? We don't have it over here so we don't really understand, but oww and I are trying to create our own this year for the enjoyment of the food...what menu items MUST we include?

I'd be asking how to incorporate that chocolate kit into my Thanksgiving menu. Where would chocoloate fit in? It doesn't usually appear on my Thanksgiving table. And I'd like to know what Goldenberries, as included in one of the kits, are.

I would ask how to make a yummy thick "egg" nog. The ones I have tried are good but they are missing the thick creaminess. I tried one with tofu but it wasn't that great. I just need the right recipe or trick.
