hmmm... I really like lentils and brown rice that I just toss in the rice cooker then add a mix of braggs and hotsauce. Recently I've been really lazy and bringing oatmeal mixed w/miso (hatcho (dark red)) for lunch to work.
I make a big pot of pinto beans with Mexican-inspired seasonings. I can eat them over rice, just plain with cole slaw on the side, or I use them in tostadas or tacos.
One of my liquid smoothie blender concoctions (either fruit based or green) plus 'mock chickpea tuna fish' lettuce wraps (base recipe found on this site) and carrot-ginger salad on the side...yummytummy!
i make lots of soup from bulk bin items, and bulk spices, so cheap, good, filling, and eco-friendly!
Ginger carrot soup from Vegan Table. Yummmm and so cheap, even with organic carrots! And some homemade hummus. Boom. Cheap delish meal.
a veggie sandwich, made from cucumber, onion, tomato, and peppers all fresh (and cheap) from the farmer's market on a 9 grain roll with rice cheese.
My favorite inexpensive meal is oatmeal. With millions of add-in options, you can't get bored with this cheap staple!

Pumpernickel bread, spread with hummus, topped with alfalfa sprouts and sliced portobello mushrooms. YUM! Have it about three times a week.
It's hard to pick just one! Curried lentils and brown rice, stir fried tofu & veggies with brown rice, and of course hummus with whole grain wraps or pita. Oh and tofu stew and dumplings!

In the summer it's right out of the garden. Some kale, onions, and peppers cut up and added to my steamer for 6 minutes. Then top it off with my homemade dressing consisting of apple cider vinegar, balsamic vinegar, Realime, orange juice, and spicy brown mustard..... This is a quick, easy, fantastic lunch for me.... My favorite inexpensive lunch meal is leftovers of rice & beans or taco salad. The later is essentially the former on lettuce with a helping of salsa and sour supreme on top and a handful of tortilla chips.
Vegan Mac n' Cheese has been, and always will be, my favorite food!
Beans and brown rice...I eat that combo several times a week!
My favourite is the Flexible Thai Soup. Cheap, easy, versatile and always delicious. AND it smells so good it makes everyone in the office wish they could trade their lunch for mine - even the meat-eaters! ^-^
