My favorite way to eat tomatoes is fresh and raw straight from the farm or my own plants. Nothing better then the sweet, savory taste of a beautiful tomato! <3 NOM!

I like to go out to the garden with a salt shaker and eat them right off the vine. Or I like to make fresh salsa w/ cilantro, lime, onion and just a bit of mango for sweetness and color - and last but not least, freshly sliced on hot pizza right out of the oven.

My favorite way to eat a tomato is standing next to the plant I just picked it from in my garden...  Bite right into it like an apple and let the sun-warmed juices fill your mouth.  YUM!   ;D

Also...  I created a recipe with tomatoes based on a salad that my mother makes.  Chopped tomatoes, cucumber, chickpeas, basil, and a yummy vinagerette dressing.  The chickpeas add a "cheese-like" texture, and the flavors come together nicely after the salad sits for a few hours.

ohhh! i haven't been entering lately because i haven't been interested in the prizes and i figure i should let other people who actually care win.. but yay! a seasonal eating book! i love eating seasonally!

my favorite way to eat tomatoes is raw right off the plant. i looove fresh ripe tomatoes. slightly warm from the sun. yummmm.

I love eating grape/cherry tomatoes right off the vine. Or on a grilled avocado sammich. Oh oh oh oh, even better, breakfast tofu sandwitch with tomatoes. drooollll.

ohh MAN, tomatoes...so much could be said.

I used to live with a guy Joseph who was like a gourmet chef. He made these awesome little appetizer things for our movie nights - he'd slice up a nice baguette, slice up some little yellow & red tomatoes, and toast & roast them with garlic, olive oil and thyme. DEEE LISH!!! I stole his recipe after we moved and have called them Lil' Joses ever since. They were always done to perfection that I will probably never be able to emulate, but they're so darn tasty.

other than that, I love eating cherry tomatoes right off the vine...so so tasty, and putting them in homemade guacamole is great too. Or in minestrone soup. Or chili. Or on a TLT. I could go on and on

I enjoy tomatoes raw, bite into them like any other fruit. But this recipe is particularly memorable, with fresh basil, buttered and grilled with Earth Balance.

I don't like tomatoes raw very much, but I do love tomatoe sauce and tomatoes  in a salad called ensebollado.  It is a salad from Ecuador consisting of thinly sliced red onion, thinly sliced tomatoe, chopped cilantro, oil, lemon, and salt.  This is the only way I eat tomatoes raw!

Panzanella!! Garlicky toasted bread cubes w/ raw tomatoes and a balsamic dressing. I can eat a ton. I also just made a BLT salad that was an awesome use of tomatoes.

Fresh out of the garden, cut in chunks with a dribble of olive oil, sea salt & pepper :)

I love tomatoes just about any way you slice them (lol).  My favorite way to enjoy them however, is atop a double toasted cinnamon raisin bagel with some cream cheese and thinly sliced onion...yummy!  Peace. :)

;)b Oh how I love nature's bountiful, beautiful tomato! Let me count the ways!!

Truly there are so many gorgeous, delicious ways to enjoy this fruit! I can't give just one.

...and seriously.... FRENCH tomato soup! Good Lord! Thank you VegWeb!!! 

Hmmm... So if I may, I want to share my top 3!
1. God bless the tomato, vegenaise, and soy cheese sandwich! This has been a life-long favorite from my childhood on the farm, where we could pick those little rubies right off the vine!

2. Since I see that pizza (oh glorious pizza!) is the weekly theme, I must include my very favorite, summery, tropical version: spelt crust, home-made tomato sauce, topped with soy/rice cheese, soy pepperoni, tons of pinapple, mushrooms, peppers, diced sun-dried tomatos, more soycheese?, all topped by thinly sliced fresh tomatos ( not diced) because when you bake the pizza, put it on broil at
the end for a min. or three to lightly caramelize the sliced
tomatos... Amazing! I kid you not! 

3. Diced, chunky tomatos tossed with cucumbers, olives, red/orange peppers, walnuts, sunflower seeds, (any nut or
seed of your liking) grated soy cheese (or diced cubes),
Clementine slices(fresh not canned), berries, crumbled soy
bacon (Otherwise known as "facon" hee hee!), and any
other fruit (I sometimes add peaches, pear, even banana -
why not! ) and all topped with a choice of raspberry,
balsamic & olive oil, or whatever creative yumminess your
taste buds desire! I call this my chunky, super-salad
because it has "it all", and is a total meal on it's own, or
with a slice of vegan, home made, piping hot, fresh
bread... 

Fresh off the vine warm from the life giving summer sun, or chopped with basil and a good olive oil salt and pepper and cucumbers on pita bread. MMMMMMMMMMMMMMMMMMm yummy, summer and tomatoes go great together! :)>>>
