The warm weather means barbecuing (preferably with lots of artichokes!) and laying in the sun! Busting out the shorts and sundresses! To go along with your cute new wardrobe, why not fancy your face up with gorgeous summer colors? I love artichoke hearts on pizza, fried (ah!) artichoke hearts, or just steamed artichokes so I can dip them in some Wildwood Aioli. YUM!

Tofu quiche (recipe found on VegWeb  ;)) with marinated artichoke hearts.

I just eat artichoke hearts right from the jar.  Sometimes they make it to a salad.

I like to dip the steamed artichoke leaves into a mixture of 1/4 cup olive oil, the juice of a lemon, a minced garlic clove and a dash of salt. This sauce is great cause you can add any fresh herbs you have on hand. A little pinch of basil, thyme, hot chilies, cilantro, chives, etc can be added as desired for variety. I also like to let the steamed artichokes chill for a while in summer, they are just as good cold as hot in my books.

I like spinach artichoke hummus. (Okay, I love it obsessively.  I'll admit it.)  Try it in a pita stuffed with lettuce, tomato, onion, and cucumber, and you'll fall in love, too.

I make a killer hot spinach and artichoke dip that I modify from a recipe from on of Sarah Kramer's boosks.  It's so good you could use it as a sandwich spread. Hungry...

My favorite artichoke dish is probably just boiled artichokes with vegan garlic aioli.  I love artichokes!
