Being vegan is great for the Earth. You know what else is great for the Earth? Shopping in ways that align your personal values with products that reduce harm and create jobs. This week, I'm giving away a unique eco friendly bag made by women in New Dehli who collect a fair wage to transform discarded plastic litter into the cutest toes around. Who knew reclying could be so fashion forward? The creativity of these women is inspiring. I mean, I can't even sew a button on a shirt and these people make on-trend bags with garbage? I hang my head in shame. In addition to being absolutely adorable and socially responsible, the bags are produced and purchased under Fair Trade conditions. Love.

Though not strictly a zucchini recipe, my favorite way to eat zucchini is grilled on a sandwich, along with other grilled veggies like eggplant, red bell peppers, onions, and portobello mushrooms, as well as grilled tofu. I like to make the sandwich on a nice crusty bread and dress it with an herbed mayo. Yum!
Chocolate Zucchini Loaf
I think I will make some chocolate chip zucchini bread today, or else muffins. Zucchini is great in anything!

I love zucchini in veggie lasagna, veggie enchiladas, or cooked up with tomatoes and edamame and thrown over couscous.

Slice up some zukes, add a little salt, pepper, garlic and olive oil. Simple easy and delicious!

I love Zucchini sautéed in what I call "Summer Sauté. (Yellow Squash, Zucchini, Garlic, Yellow Onions, Mushrooms, Oregano, Italian spice blend) I thought about adding this recipe to Vegweb, but it's so easy it doesn't feel like a "recipe".
Thick moist, slab of pure, unadultered zucchini bread(no nuts, chocolate chips or raisins) right out of the oven served with French Press coffee on a rainy day.
i love zucchini so much! i use it in everything :) so it is the base veggie of my stir-frys, and that is probably my favorite recipe since i am too lazy to bake zucchini bread... oh so good though. :)

Zucchini is freakin' great. I use it in a bunch of great ways--stuffed zuchs, RAWsta noodles, spring rolls, stir frys, etc.--but my favourite thing of all:
Zucchini and Carrot Bread!!
