I have not found a good packed lunch. My sandwiches fall apart in the baggie before I even try to eat them. Ann
I love avocado sandwiches with hummus and carrots. Sometimes an apple. :) I'm making that tomorrow, actually.

I'm a huge fan of left overs--you know...I have to leave in 5 minutes but I still need lunch, oh look there is half a carton of last nights Chinese left...I'll grab that...
...but, if I am actually packing up a sweet lunch than I like to do an epic awesome vegi sandwich w/ carrot sticks, hummus, homemade cookies, and a piece of fruit. Voila! Lunch is served <3
Big kale salad bathed in an almond butter/coconut water/date-sweetened dressing and topped with crushed almonds.
The best lunch ever is a peanut butter and cream cheeze topped bagel with a side of apples to swab little bits of peanut butter off onto. Delicous and very portable---just schmear the bagel, then put it back together. No muss, no fuss.
Left over eggplant stir fry with brown rice and pita chips.
I'm all about the reuben salad right now: savory tempeh, avocado and sauerkraut with a vegenaise-based Russian dressing over lettuce.
I love cold leftover takeout chinese noodles. Cold noodles are so fantastic for lunch, very refreshing!

My favorite lunch is a salad with black beans, corn, avocado with a cilantro lime dressing.
My favorite is the old standby PB & J with some rosemary & olive oil triscuits on the side and an apple. 8)
Hi, I pack my lunch on a regular basis. I work in a hospital on night shift. I really enjoy TLT's, some sort of fresh veggies, and of course my homemade hummus duo. (black-n-tan hummus). Yummy! I will post recipe.

I love couscous salad!! Couscous with black olives, spices, tomato, avocado, and olive oil. Delicious!!!! :)>>>

my favorite lunch is chickpea "toona" with lettuce and tomato on whole wheat bread. I love the recipe from Happy Herbivore.
A salad made with mixed baby greens and topped with marinated artichoke hearts, roasted red peppers, mushrooms, chickpeas and a whole sliced avocado. With a little bit of Italian dressing on top, mmmmmm!
Curried chickpea spread with lettuce cups. Yum!
When it's cold outside, chili and crackers hits the spot. In the summer, I go with salads,fruit, or mock tuna on wheat bread.
