My fav lunch is a whole grain (12 grams of fiber!) wrap spread with refried black beans (Love Amy's!) and loaded with organic spinach, onion, carrots, red peppers, celery & grilled mushrooms... IF I have an avocado, I'll add some slices to serve them on the side or I'll half a cucumber and spread it with a bit of peanut butter. Delicious! AND very filling... Travels well too...
My favorite packed lunch is a medley of Meditteranean! Tabouli, hummus, pita and falafe, with a side of calamata olivesl. Mmmmmmm...
I am a trail mix, apple, and cookie kind of girl. love this bag!
I absolutely love hummus wraps with fresh tomatoes and green peppers from my garden, plus lettuce and bean sprouts. A piece of fruit and a homemade smoothie makes it all so yummy!
My favorite lunch is either either a ezekiel sandwich with homemade roasted red pepper hummus, fresh basil, lettuce and heirloom tomatos or a super salad with romaine, tomato, avocado, organic white peaches, seitan, scallions and almond oil and vinegar.
Tofu quiche. Pastry base packed with tofu and grated supermelty vegan cheese & onion

A hummus wrap with kale and tomato. Easy to carry and not to time consuming to make. ;)b

Kushari, tabbouli, and falafel with tahini. I also pack unsweatened mint ice tea.
Spring roll with julienned baked tofu and cilantro and fresh fruit or roasted bell pepper hummus and pita chips. Mmmm...I'm getting hungry! :)>>>

I love to have a whole wheat wrap spread with a good amount of garlicky or artichokey hummus, some tabbouleh (with extra lemon--yumscrumarama!), even more tomato, and some chopped red onion.
I'd also pack a Blue Sky cherry cream soda, a bag of organic apple slices, and a sweet little cloth napkin to make me feel really special and uber-fem while chowing down like a ravenous construction worker. :)
Mmmmm chickpea salad on a pita with fresh spinach and sprouts. My favorite lunch to take to work. With some fruit, of course!
I adore doing little bento-style lunches, usually with some fresh fruits and veggies and little sandwiches. Putting together lots of little bits and pieces is half the fun~
Chickpeas with Vinegarette and cherry tomatoes, and olive tapenade with green peppers and carrots to dip! ;D
My favorite is leftover homemade vegan pizza. Eat it cold! :D
I really like some sort of "Dragon Bowl" packed in Tupperware. That is, brown rice with veggies, tofu and sauce.
Simply a bottle of water, some sliced extra-firm tofu, and some fresh cut-up veggies with maybe an orange and a So Good Strawberry Soymilk tetra-pack thrown in. Very lovely.
