I've gotten through this entire newsletter without making a joke about how "quick and easy" vegans are. Well, I ALMOST got through the newsletter without making that joke. A valiant effort! Sort of! Hehe. Okay, I'll stop acting like I'm 12 years old long enough to tell you that this book is completely awesome. It's filled to the brim with recipes like Black Rice Salad with Chile Greens, Creamy Vegetable and Cashew Nut Curry, and Cherry Hazelnut Oat Cookies. Being easy never felt so good! Okay, I'll stop.

MY Daily salad: Romaine lettuce, onion, cucumber, green or red pepper, broccoli, cauliflower, topped with salsa and my homemade dressing.....Healthy!!!!

Soba noodles, veggies, and hummus mixed in a bowl and eaten with chop sticks.  :)

...tofu quiche--I've gotten so quick at preparing it that it's in the oven in 15 minutes, and ready to eat in about 35 minutes. Okay maybe not the quickest recipe ever, but very delicious, and one of my fave recipes on VegWeb.com. Can't wait to read Easy Vegan!

Tostadas, pinto or black beans topped with a mountain of shredded lettuce, tomatoes, avocado and a chili-lime salsa

Easiest lunch ever: 1 can black eyed peas, 1 small can corn, 1 red pepper chopped, 1 huge handful of cilantro(chopped), Mix it all together and add a touch of olive oil and balsamic vinegar to taste. Salt & Pepper also to taste. YUM. Some sliced green onions and/or chopped red onions don't hurt either.

My favorite easy meal is a tofu stir-fry with vegetables from our garden! Delish! ;)b

I love to roll leftover beans and rice, stir fry veg or whatever I have in a corn tortilla. Top it with salad, salsa, guacamole and I am good to go!

Quick still-saute (let it sit) some tofu in a bit of coconut oil w/curry...smother it with cut tomatoes,garlic & zuke -- let it sizzle - the top cooks down and the tofu bottom has a crust.  Layer it over some polenta (vegan - with added basil - mmm) -- homemade or store bought.

Grilled avocado sandwiches or burritos (but it is only quick and easy when the guac and refried beans were made ahead of time).
