I've gotten through this entire newsletter without making a joke about how "quick and easy" vegans are. Well, I ALMOST got through the newsletter without making that joke. A valiant effort! Sort of! Hehe. Okay, I'll stop acting like I'm 12 years old long enough to tell you that this book is completely awesome. It's filled to the brim with recipes like Black Rice Salad with Chile Greens, Creamy Vegetable and Cashew Nut Curry, and Cherry Hazelnut Oat Cookies. Being easy never felt so good! Okay, I'll stop.

WAAAAHHHH!!!!!  I'm a newbie trying to be as vegan as possible and I don't have any fave quick and easies yet!!!  I have some fave but they aren't quick!!!  This is why I need the book!!!!!  I gotta learn some of these recipes!!!

Stir fry made from frozen veggies with caramelized onions, soy sauce, hot chili pepper, and agave nectar on rice or whatever I want to put it on.

Black bean and quinoa salad. If I use canned beans, I can have dinner ready in about 15 minutes!

Stir Fry with Tofu and Brown Rice

Cheesy quinoa bake with different cheeses, leeks, peppers, and any other veggies I have around. It lasts me a few meals and it's as delicious cold on a hurried morning as it is steamy from the oven!

Collared green wrap. With raw tomato pesto, raw nut cheese or hummus or avocado mayo, radish sprouts or lentil sprouts, scallions or red oinions, hot sauce. If you have the ingredients prepared in the fridge you can quickly assemble to devour. This invention weaned me from the soy cheese black chip and salsa habit of mine.

I make a pasta primevera using a mixture of alternative grain pastas, fresh tomatoes, sauted onion and garlic and basil from my herb garden. If I have time and energy I do a quick steamed brocolli to add to the top and sliced cukes on the side with a nice chewy peasant bread.15 min and we are at the table.  : )

One my fave quick n' easies would have to be pasta. I love to make a sauce with red peppers, olives, chickpeas, tomatoes, onions, and nutritional yeast. It's filling and soo yummy! The nutritional yeast always makes the sauce so creamy too. Or I might have to go with a wholegrain sandwich with Veganaise, avocado, tomato, a couple slices of tofurkey... But I have so many favourites I couldn't pick just one.

Chickpea salad sandwich (mashed chickpeas, vegan mayo, chopped carrots and lettuce, garlic powder and black pepper on toast).

A simple veggie soup. Toss whtever veggies I have laying around in some veggie broth and bring to boil. Toss is some dehydrated veggies, onions, and bacon bits, let simmer for a little and season to taste. Yummers.

bananas, tons of spinach, and water in a blender for the easiest, filling smoothie.

steel cut oatmeal.  you can dress it up any way you like -- plain, sweet or savory.

grilled tofurkey... tofurkey lunch meat + vegan cream cheese and mayo + green onions grilled with some vegan butter
