Lisa Jervis is the founder of Bitch Magazine and the all-around coolest person on Earth. She's also way into eating easy, healthy, and local. Oh, and vegan. Yay! Her new book, Cook Food (https://secure.pmpress.org/index.php?l=product_detail&p=131), is a "manualfesto" that teaches people how to make nutritious, inexpesive, fantastic food. Filled with mouth-watering recipes like "lentils with wine" and "spicy brownies", this book will have you eating on the cheap, without sacrificing the delicious.

My favorite quick, easy, and CHEAP vegan meal would have to be the bean burritos that my boyfriend and I make together quite often.  We start by cooking up whatever leftover veggies we have laying around, add in a can or 2 of black beans (or other beans we have), and seasonings (usually just a packet of vegan taco seasoning.)  Then we load up a burrito shell with a layer of refried beans, the bean and veggie mix, salsa, and tofutti sour cream if we have it (optional.)  We have made up to 30 at one time and put them in the freezer for quick grab-and-go lunch box meals.  We figured out the cost once and it was like $0.80 per burrito I think, and this is using mostly organic ingredients too!  Plus they are huge...  OK there you go - I really really want to win this book!!!

My favorite quick n' cheap meal is probably bean burritos, though kale and quinoa comes in a very close second.

my favorite quick and cheap (I generally always have the ingredients on hand already... and make enough dressing to last more than one night..) is a salad i found on someones blog... everyone ive made it for loves it too!

I find that everything taste better in a taco shell.  beans, rice, tomatoes, guac.  whatever I happen to have

my fave inexpensive vegan dish is a bomb-@$$ salad i make with pecans my grandmother gathers and shells that i roast myself. the nuts are generally the priciest part of a salad so getting a pound or two for free from grama makes all the difference!! i get the "localest" produce i can find from whole foods and/or the farmer's market and serve it to my friends and family or just eat it all myself  >:D

I'd have to say pasta with marinara.. When I can manage to get the noodles right. I'm cooking challenged and could really use a cook book. ;)

This book sounds awesome. 

Brown rice, beans, and pasta sauce.  Cheap, hearty, and it is great as a leftover.

My favorite, most inexpensive dish is vegetable stew.  I make my own veg stock and put in whatever veggies I have in the frig/pantry -- chopped onions, carrots, potatoes, celery, bell peppers, squash, etc.  Sometimes I add either pasta, rice, beans or lentils, and then whatever spices depending on what style of dish I'm going for.

Quinoa! I just put loads of veggies (and sometimes some canned beans) in the pot (using a collapsible steamer insert with little feet) while it's cooking and the veggies are steamed when the quinoa is finished. It's great because you can change the style of the dish with the spices you use and you can change the heartiness with veggies/beans you choose.

I love me some Turkish Red Lentil soup (sounds way fancier than it is). It's basically red lentils, veggie broth, potatoes, onion, carrots, garlic, and paprika. I love it cuz I usually have all of the ingredients on hand and it only costs a little over a dollar to make a good sized pot :) .

Mix black beans, refried beans, spanish-season rice, tomato and lettuce.
Best taco filling, everrrr. I sometimes use brown rice.

Definitely quinoa with kale.  I never get tired of it and it kept me alive when I didn't have a job a couple years ago.

my whole familys favorite cheap vegan meal is : about 3 or 4 cups cooked beans (we like adzuki beans best  their cheap and quick to cook) every veg we have in the fridge  :like maybe, a leek, some onion, celery, carrots green beans what ever is on hand if we have any greens those go in too    chop it all up and saute in alittle olive oil and 1 veg bouillion cube  and a little water  pour into a casserole dish and cover all with peeled and sliced sweet potato bake till topping is soft  this costs all together maybe $3 or $4 bucks  and i use it to empty the fridge of my veg that is a little past prime it also makes enough for lunches the next day and it only takes a few minutes to put together :)>>>

for easy and cheap, I don't play around, I just either boil up some lentils or make a bowl of oatmeal.
