Spicy black bean and tomato tortilla wraps.

Beans and tortillas: cumin seeds, oil and chopped onion, stir-fried til the onion's soft; add torn up leftover corn tortillas and stir til they're limp; then a can of pinto beans. Stir til it's all hot, add lots of kosher salt (I can't help it, I love salt) and whatever hot sauce/chili verde/salsa you like. Cheap and easy and yummy!

sweet potato spinach and chic pea curry - a can of diced tomatoes w/ chilies, a can of drained and rinsed chic peas, two cooked sweet potatoes diced and 10 oz f thawed spincach.  Two teaspoons of curry powder, dash of cumin, garlic and some mustard seeds.  Yum!!!

Chili! Throw in some beans, veggies, tomatoes and spices, and you have comfort and nutrition at very low cost.

any form of lentils and rice. I always have both those things in the kitchen. Throw in an onion, some spices and whatever veggies are in the fridge, and it's a hearty stew type dish. Healthy, and filling enough that I always have lots of leftovers! mmm. and great for cold days when you need to warm up!

Everything  I make has to be healthy and as cheap as possible. Since I pick chanterelles when they are in season the cheapest meal would be spicy chanterelle pasta: left over noodles mixed with a lot of heat/spices and chanterelles, sesame oil and chili oil and a can of organic peas.

Goodness.  For me, heating water is cooking.  So - plain oatmeal.  It's cheap and I lurve it.

Stir fried bok choy over rice. It's also my ultimate comfort food.

my favorite cheap vegan meal to make is sushi and miso.  Yay for being married to a sushi chef ~^_^~

Soup is as cheap as it comes!  I always have veggie bullion cubes on hand (and veggies of course).  Anything you throw in there will work.  I like a nice homemade vegetable lentil soup (lentils, garlic, onion, celery, spinach, bell pepper -- yum!)

Beans and tortillas. I can get fresh, vegan tortillas for a dollar a pound, and a huge sack of local pintos for twelve. The beans last all winter.

My favorite inexpensive vegan dish to prepare is an Amy's Vegan Entree. And no, I don't work for them, but I wish that I did ! Their entrees are insanely delicious, inexpensive, hot and filling, and there is a huge variety. I always prepare them in the oven, because I just happen to think that they taste so much better made in the oven than in the microwave. My favorites are the Black Bean Vegetable Enchilada, and the Indian Spinach Tofu Wrap. YUM

Tostadas loaded with beans(black or refried), shredded lettuce, tomatoes, salsa and any other chopped vegetables you have in the refrigerator.

Steamed vegetables and brown rice.

it will have to be the garlic and greens soup from colleen goudreau's book "the vegan table." the soup is literally garlic, onion, potatoes, and greens. oh yea, and deliciousness.
