The whole newsletter is about eating healthy fall food but you know what? I miss my chocolate! I feel like such a cliché of a woman but chocolate is so freaking good, I don't care. I'm a big fan of brown rice bowls with tofu and whatever greens and veggies I have on hand. Top with miso-ginger dressing and it's a win!

I love stir fry with zucchini made into noodles in spiral slicer. They taste like rice noodles once you add a peanut butter shiracha sauce. I like wads of bean sprouts mushrooms onions red pepper snow peas or any other clean out the fridge veggies.  Fresh green onions chopped nuts and lime juice to garnish. Taste like a healthy pad tie

i love homemade baked falaful( and because my daughter had gluten issues) we have them on corn tortillas and top them  with a salad of chopped tomatos ,cucumbers onions peppers with a splash of olive oil and lemon juiceand some dried dill weed ,and if were really hungry a green salad on the side      ;)b

My favorite healthy recipe is peeled potatoes, carrots, broccoli, cauliflower, and the long frozen green beans cut into individual bites all in the steamer. I load them up with granulated garlic, vegan margarine and a touch of salt. Absolutely delicious! So easy and good for me!

favorite healthy meal is hearty split pea soup (or lentil...depending on my mood and pantry options) and fresh-baked whole wheat bread.

Brown rice, steamed broccoli and a touch of soy sauce.
Satisfies my need for a little bit of health, and it's cheap as all get out.

My fave healthy dinner (also quick) = pan-grilled burrito and gigantic salad. I eat this every day almost!

My answer changes by the season! Given the abundance of it, my current favorite dish is butternut/acorn squash-apple soup (with some curry spices) and some crusty whole wheat bread on the side. Perfection.  :)

My favorite healthy meal would have to be roasted butternut squash, cooked and seasoned kale with a side of tofu that I cook in a pan with a little bit of agave nectar, olive oil, salt and pepper. And for dessert I indulge in a scoop of purely decadent coconut milk ice cream  :)>>>

In the fall, my favorite would probably be the black bean sweet potato chili I just made and ate leftovers for four days. Yummy!

I have a great recipe from Self.com, called Veggie Cassoulet. It has cannelini beans, celery, garlic, tomatoes, carrots and more...so delicious with french bread!

I love to eat anything from Jakarta Hut restaurant in Waco, Tx.  They have the best vegan food. My favorite so far is their "chicken" pot pie.
