The whole newsletter is about eating healthy fall food but you know what? I miss my chocolate! I feel like such a cliché of a woman but chocolate is so freaking good, I don't care. This week, we've got three highly delicious chocolate bars from Antidote (http://www.antidotechoco.com). Antidote creates chocolate combinations with roasted and raw cocoa for a great taste profile and maximum natural nutrients. Healthy meal? Salad(spinach, raw veggies, and seeds), whole grain crackers w/ a bit of something protein-y to spread on them, like a bean spread w/ raw garlic. I always feel great and energized when I eat like this.

My favorite healthy meal is Organic green beans sauteed in a little EVOO, sea salt and fresh cracked pepper, served over a bed of organic brown rice, and topped with a drizzle of lemon juice and toasted pecans; served with a salad of Organic hearts of romaine, tomatoes, with touch a lemon juice and EVOO and freshly cracked pepper. YUM!!!! ;D
We like to make different variations of pasta and vegetables...or just a nice big salad with sunflower seeds...yum!
My favorite fall meal is chickpea, tomato and asian eggplant curry. Use generous amounts of onion and ginger and serve on a bed of sliced spinach and quinoa. I try to have this often.
My favourite healthy meal is quite possibly the easiest and simplest meal ever. When i am craving comfort food in a hurry I always go for lima beans and rice. I cook the rice with veg stalk and then toss in a tin of lima beans and serve alongside cooked carrots or whatever cooked veg is kicking around. So healthy, so easy, so delicious!
My fave healthy meal is a salad with lots veggies topped off with raw walnuts or almonds for extra crunch........
My favorite healthy meal is a veggie alfredo pizza with mushrooms, spinach, onions, carrots, broccoli, (and whatever else I find around)
and dcveggie's cashew alfredo sauce made with almonds instead. Holy cow, I can eat the whole pizza in one day! ::) :D :o But that wouldn't be healthy!
Hummus, steam brocolli, and a potato.
My favorite healthy recipe would be Vegan Veggie Stew ... black beans, garbanzo beans, carrots, yellow squash, corn, crushed tomatoes, with some Tempeh.... ;)b
My favorite healthy meal is a stir-fry. Some combination of vegetables, plus tofu, tempeh, or seitan, with a bunch of garlic, ginger, red curry paste, and some soy sauce, rice wine, and rice vinegar. Served over brown rice. We eat this at least once a week!
Salads! Heavy on the avocado!
I love mashed potatoes and gravy, peas, carrots, yams and cranberries with whole wheat rolls and salad.
I love soups! I make a great veggie soup with Vegetable Broth and lots of different veggies. For spices, I add Garam Masala and Cumin; gives it an Indian flavor that is just delicious! :)>>>

My healthy fall meal is anything made with pumpkin,soup, seeds, I even put pumpkin in my cornbread.
My favorite healthy meal is brown rice, bok choy, shiitake mushrooms, and tofu with a soy-based sauce that has a little kick to it ;)
I also LOVE Pasta Della California in Veganomicon... MMMM avocados!
Brown rice and broccoli. Or a banana-spinach smoothie.
